just to name a few
You wouldn't want to play a game where you shoot teenagers?
Well I will break down the games for you and what they would consist of:
Frost/Nixon: sit through 2 hours of yawns for a QTE to get Nixon to admit the truth. THE END.
Milk: Do gay stuff and mayor stuff (sorry, never seen that movie)
Gandhi: BANG!BANG! "Oh God" DEAD! The end
Gran Torino: Threaten teens with racist remarks and befriend a hmong family, while alienating your horribly rude real family. then you reach the final boss where you
talk tough/insult the teen gangbangers, then pull out a lighter, pretending its a gun. Get filled with 10 clips worth of lead. Get those kids arrested. THE END.
What would make a good game would be Dirty Harry, made by Bethesda in a similar style to FO3, only in a normal city, not a post apocalyptic wasteland.

I'd love a Gran Torino game. GERROFF MY LAWN *BANG*

Let's see... how about Match Point? (actually... no, I'm not that dirty. Yet.)
Kramer vs Kramer?
The Phantom of the Opera? Hah, that would be like a really, really difficult SingStar.

I could envision most movies as games, it just depends on the genre. Examples (a few from this thread):

There Will Be Blood. Economic Sim based on America's early oil tycoons. Sounds pretty cool. Gotta get that Bandy track. "Drainage!"

Eyes Wide Shut. A proper mature adventure game. Remember Gabriel Knight: Sins of the Father? There would be lots of fucking. "Press 'X' to cum!"

Gandhi. Ok, this is tougher. I think a BioWare-style RPG, but without the combat. You know, you play Gandhi and do everything you do in KotoR or Mass Effect, except for the fighting.

Pride and Prejudice. Ok, I'm out. Tetris clone? I don't know.

....this might not end well.
Dammit, you totally stole that out of my brain. I was actually having a laugh last night about the idea of a Twilight video game, where you could play a teenager angsting over a person who has willfully chosen to take biology 108 times. Then I had the unfortunate idea pop into my head that it might actually be really cool because I've played Vampire: The Masquerade: Bloodlines, the only use of vampire and double colons that I approve of and it was SWEET. Since it is a very real possibility considering the power of this franchise, I reckon I'd buy it just on the off chance they went in that direction.

The Davinci Code, oh wait they actually did make a game for that one, and it did suck.
Ok then, um, Night at the Museum.

As I mentioned on a different thread, transcending mediums is often a very difficult task and usually much is lost in translation, and that's assuming any real effort is put into it; which it often isn't. Well I suppose that's not fair since I don't really know how hard these people actually work, but I can say that not enough effort to make it work is put it, that is evident enough in the end result. Going from Video Game to Film is a particularly bad idea simply because video games have to keep their audiences entertained far longer then films. There's also the fact that if you don't want a cutscene heavy game, you're going to have to cut out most of the non-action scenes.
