LittleBigPlanet is freaking awesome. May be slightly too "childish", but that is no bad thing.

Ratchet and Clank is also a good series to start on. It's not too challenging, and the games are very well made and funny.

Maybe Alice: Madness Returns
That's pretty good and pretty.
Perhaps LBP.
Then get her on something that will REALLY shit her up.

Sly Cooper. The controls are easy to master, it has a great story and you get to do some really cool stuff. Plus you can get all three for cheap now.

Lol, not like that.
What i meant was freak her out like an excessivly violent or scary game.
Although shitting her up would definetly freak her out.

Maybe Alice isn't the best idea, we really don't want to scare her too much.

Really?
Maybe i'm just too desensitized to notice.
But in that case...
Perhaps folklore?
Oh and at a later stage get her the orange box, especially portal.

Get her to play Demon's Souls. It's always good to dive in at the deep end.

It isn't really scary but it is pretty strange, and it's definitely not the first impression you want to give somebody of games. Personally, I think Uncharted would work pretty well since it has a lot in common with movies.

Don't think uncharted would be the best... get her to try some games and see what genres she likes.

Step 3 involves making up?

Anyway, it all depends on what type of games she likes. Go for the platinum series. Old awesome games for old prices. Ratchet and Clank springs to mind.

Also, co-op playing with your GF is awesome.

...If the girl I'm interested in wanted to get into games, I'm not sure what I would start her on. I suppose I'd let her pick games at random then tell her about them so that she could pick the one liked the sound of.

While there's always the matter of taste, and first finding something you think she might enjoy (her taste in movies is a pretty good starting point for picking just the right game)...

Start with LittleBigPlanet.
...there's this.

Seriously, LittleBigPlanet is not only one of the best games I've ever played (for a wide variety of reasons; but that's a whole different discussion), it's also one of the most friendly titles for all interests, ages, etc. Pick up LBP (if you haven't already, for some strange reason), make sure you have two controllers, and spend a good couple hours playing the hell out of it with her one night. Throw in the occasional "SLAP" while waiting on a board completion pad for laughs, and if she doesn't fall in love with it, I will apologize to her personally.

In fact, I can even relate a story:
My prior roomate worked at GameStop for a time (keep in mind that this man has a fairly odd, twisted and sardonic sense of humour; much like my own). One day, a young lady walked in, and asked him for a birthday gift idea for her own boyfriend from the PSP collection, because she has no idea what he enjoys and has no interest in videogames whatsoever. Friends of his had suggested LBP, and she queried my friend. He promptly responded that it would not only be a good bet, but that he was so damned sure her boyfriend would enjoy the game that if he didn't, she could bring it in and my friend would EAT the UMD in front of her. He then showed her a random UMD from the drawer behind the counter to assert how serious he was, and the fact that it's a small disc encased in hard plastic. He sold her the title, and she walked out fairly pleased.

Two weeks later, she walks in again. My friend was suffering from a fairly bad hangover that day, and was dreading each step she took toward the counter. While he was ready to hold up the bargain he had originally made (albeit, he really wished he didn't have to; too honest for his own good, at times), she confirmed that not only did the boyfriend enjoy the game, but that she was there to personally buy herself a PSP and a copy of LBP so that she could play with him.

In short, while there may be a variety of games that might cater to your girlfriend's particular tastes and interests, LBP is one of the best starting points for anyone who's just starting to game.

EDIT: Hell, if she doesn't like it, I would even be willing to honour my ex-roomate's deal, provided you find a different game she does enjoy (since it wouldn't be all too fair if she just ended up being adverse to gaming entirely). Just as my friend was, then, I AM DEAD SERIOUS.[footnote]DISCLAIMER:I will make no promises to actually swallowing the pieces of the disc/casing, due to the fact that that could present serious injury, and do not advocate anything of the like to fellow Escapist members. I am, however, serious about biting through the damned thing.[/footnote]

Try something 2d first, then simple 3d, then you can start getting to the complex stuff. Use a logical progression of complexity. Avoid sandbox games at first, if you don't know what you're doing, they get disorienting quickly. I'm thinking something like

Little Big Planet
One of them side scrolley games with a little bit of wiggle room. I can't think of any newer ones off the top of my head.
At this point, branch out into genres. Older, simpler games would probably be best, but try to use the big, oft plagiarized franchises if you can't do that.
