At least my favorite Jedi game, Jedi Knight II: Jedi Outcast had a code the allowed realistic saber fights. Limbs flew on that game, and the same could be done to you when fighting a sith. Outcast had unrealistic combat because you still had to slash people numerous times.
Cortosis armor is usually the reason it takes so much...
