If you want something similar to Soul Eater, then disregard the following.
That said, if you're looking for something unique, I'd highly recommend Spice & Wolf. It's a fantasy, but differs from tradition in that it focuses on economics and trading rather than sword and sorcery. Still, the characters are generally likeable, and the banter between the two main characters never ceases to amuse. If you decide to give it a go, I'd urge you to watch five episodes. If you don't like it after that, odds are good you aren't going to.

Can't think of much similar in terms of style to soul eater. Setting wise bleach is similar but i wouldn't recommend it overall. Care to broaden our horizons for recommendations perhaps?
Try Fairy Tail or Fullmetal alchemist if you havn't already, both have that goofy surface but FMA has a much darker core. Fairy Tail is good, but isn't dark at all. Fairy Tail is is still updating and FMA is finished, so if that makes a difference to you, so be it. Overall I would suggest FMA.

Full Metal Alchemist: Brotherhood or just Fullmetal Alchemist. The former is better, but both good. they just share similar episodes for the first 6 or 10 episodes.
Pandora Hearts, Just so you can hear Yuki Kajiura's beautiful anime music.
Claymore: the anime stops the show when it went bad, at least in my opinion. Good music and despite how I don't like fighting anime, this one was pretty good. Maybe because it's a seinen.
Puella Magi Madoka Magica - if you can stand a couple of hours of boring everyday life story, then you'll find the rest of this anime amazing, with again Yuki's music, unique animation and art styles and an interesting story, only 12 episodes long though.
The World God Only Knows: It's Hilarious, watch it.

I'm not a big anime guy but I find Hellgirl to be pretty funny, 1/2 of every episode they just troll someone before they drag them off to hell.
The Money of Soul and Possibility Control? That only just finished, it was basically economics made flesh, totally more awesome than it sounds.

Have you seen Yu Yu Hakusho?
If not, I'd suggest watching it. It's kind of like Dragon Ball Z if instead of aliens there were demons and instead of screaming for three episodes without throwing a punch, stuff actually happened. And the writing is much better.
