With that out of the way, lemme just recommend good animes, because I don't know what about Soul Eater you want.
Darker Than Black, pretty much just Heroes in Japan minus Hiro Nakamura.
The aformentioned Durarara, and it's predecessor Baccano, due to the great characters, and well animated action.
K-ON. The characters are great, and it's pretty good for the standard fare anime about girls. Moe moe, kyuu~ Nope, I didn't recommend that. You're probably a brony, so you wouldn't wanna watch MLP with humans.
Ghost In The Shell: Stand Alone Complex. A run of the mill police procedural, just set 20 or so years in the future, and cyborgs questioning the idea of humanity. The first season is for plot and the Laughing Man. The second season fleshes out the squad, and fighting a terrorist cell.
Serial Experiments Lain. Un. Fucking. Describable. Just, watch it.
Black Butler. This is the coolest version of Victorian/Elizabethan/whatever fucking limey that period had Jack The Ripper times I think I've ever seen, excluding Pride, Prejudice, and Zombies. Just, deal with the trap main character.
Nabari No Ou. It's ninjas, in the modern day. But unlike the other orange son of a ***** who shall not be named, there's a ninja smart enough to use a gun. Claymore. Hot chicks, doing DBZ type things, but less filler and power levels, and more characterization.
Witchblade. Despite all the gratuitously anime sized women, it's got awesome action and plot.
Samurai Champloo and Cowboy Bebop. One's a classic, and the other one was a fresh take on Japanese history.
And that's about it.
