My favorites are Gurren Lagann, Baccano, and Full Metal Panic! (+ The Second Raid, no Fumoffu). I would watch them in that order, Full Metal will take you the longest probably.

Similar feel to Soul Eater.
I'd say
Star Driver:Mech series by same animation studio
Fullmetal Alchemist:Brotherhood: also same studio
and Blue Exorcist (Ao no Exorcist):Supernatural school for demon hunters attended by a boy who is the son of Satan and vows to kill his father. Similar humor and style.

Also you should check out Aoi no Exorcist, D-gray Man, Baccano or Sket Dance and Fooly Cooly if your looking for something funny.

Oh and Fairy Tail, the action scenes and soundtracks are epic, although it can go a little over board on the fan service.

Never seen soul eater, so I can't tell if it's similar but:
Busou Renkin and Full Metal Alchemist are both great action anime.
Code Geass is my all-time favorite anime, great action, and an amazing story. A little more thought involved than the first two.

And if Your looking for a good laugh, Highschool of the Dead is a fan-service anime that really mocks itself to great effect. It's one of the funniest anime I've ever seen and it's only 12 episodes long so it doesn't take much time.

With that out of the way, lemme just recommend good animes, because I don't know what about Soul Eater you want.

Darker Than Black, pretty much just Heroes in Japan minus Hiro Nakamura.

The aformentioned Durarara, and it's predecessor Baccano, due to the great characters, and well animated action.

K-ON. The characters are great, and it's pretty good for the standard fare anime about girls. Moe moe, kyuu~ Nope, I didn't recommend that. You're probably a brony, so you wouldn't wanna watch MLP with humans.

Ghost In The Shell: Stand Alone Complex. A run of the mill police procedural, just set 20 or so years in the future, and cyborgs questioning the idea of humanity. The first season is for plot and the Laughing Man. The second season fleshes out the squad, and fighting a terrorist cell.

Serial Experiments Lain. Un. Fucking. Describable. Just, watch it.

Black Butler. This is the coolest version of Victorian/Elizabethan/whatever fucking limey that period had Jack The Ripper times I think I've ever seen, excluding Pride, Prejudice, and Zombies. Just, deal with the trap main character.

Nabari No Ou. It's ninjas, in the modern day. But unlike the other orange son of a ***** who shall not be named, there's a ninja smart enough to use a gun. And the series just points it out, and rolls with it. [sub][sub][sub][sub][sub][sub][sub][sub][sub][sub][sub][sub]Ninja pun.[/sub][/sub][/sub][/sub][/sub][/sub][/sub][/sub][/sub][/sub]


Claymore. Hot chicks, doing DBZ type things, but less filler and power levels, and more characterization.

Witchblade. Despite all the gratuitously anime sized women, it's got awesome action and plot.

Samurai Champloo and Cowboy Bebop. One's a classic, and the other one was a fresh take on Japanese history.

And that's about it.

I don't suppose there is any anime out there someone can recommend thats like Bleach or Shaman King but isn't Naruto?

I haven't watched that much of Soul Eater, so I'm not really sure exactly what would be similar to it. There are a ton of good animes suggested here, but here's what I'd go with.

Blue Exorcist (this is probably the closest, is on-going, and only has 17 eps so far)
Bleach (there's a lot to get through)
Deadman Wonderland (I hope you've never watched Superjail!)

If you're just looking for something good, I'd start into Naruto, which has probably THE single best discussion about morality, religion, and relativism running through the show that I've ever seen. It's definitely in my top 10 best media creations of all time. Fairy Tail is also pretty awesome with less of a time commitment to catch up than Naruto or Bleach. Hellsing Ultimate just released OVA 8 and is also an incredible show. All in all, you can't go wrong with most of the suggestions I've seen here.

Blue Exorcist has a similar feel in many ways to Bleach and you might also like Fairy Tail. Rurouni Kenshin may also be for you, though if you go that route I'd watch Samurai X: Trust and Betrayal first. I'm not sure why I made this connection, but Record of Lodoss War could also be a good one.

Claymore perhaps? It's pretty awesome (and I don't like action based anime for the most part, so that's saying something) and I've seen/read several anime/manga that have suspiciously similar stories, but all are terrible when compared to it. Also, it's a seinen, so there won't be characters surviving 5 minutes of bleeding their insides out. It's only 26 episodes in the anime (don't go the manga, it get's real bad quickly after the anime ends), and the music is very good.

You might like Pandora Hearts too, though be warned, 3 episode rule; the first 2 episodes are excruciating, and it starts getting good by the end of episode 3. Also, music is beautiful.

I would try one of these: Fairy Tail (mentioned a couple of times, but it's good anyway), High School of the Dead (might be a bit random, and very ecchi...), CANAAN (yeah... I like CANAAN...), Black Lagoon (about a group of mercenaries in the south china sea), and possibly Chibi Vampire (Please don't flame... It's not that bad).

I just started watching Samurai 7, and have been enjoying it.

If you've just finished Soul Eater and need recommendations for similar titles, I would suggest checking on the internet. There's tons of information on websites, and maybe you could actually catch a preview or free episode if you look in the right place.

Sorry, had to take a second to be a dick, because "I just watched _____, so make up my mind for me" seems a little lazy.

Try Durarara. The characters are entertaining, it's got mystery, gangs, mythical creatures of the night, feuding superhumans, a black Russian guy who sells sushi when he's not kicking ass, and a touch of romance here and there. It's got a very good story and it will keep you on the edge of your seat from beginning to end.

Just watch the Toaru Majutsu no Index/(Railgun) series, the core series has no filler and the characters and story are quite unique and enjoyable.
