Find some Mudcrabs. I hear there quite fierce.
Fiercer then me, or so I'm told.

Level up just your illusion skill, and have fun with paralyze. It makes every weapon hilarious.

Do the main quest. Trust me, at level 2 there's very few Clannfears, almost all Stunted Scamps and the occasional Dremora.
Which is why I leave it till about level 25-30. Amazingly funny and challenging on the last battle trying to escort Martin to the dragonfires whilst dremora's, Spider Daedra's and Daedroths fling all the soldiers round. Brilliance.
Unless it glitches like mine =] they wouldn't follow me into the temple district so I went there myself under the cover of invisibility and waited in the temple until they showed up. ^^

Okay, so i'm a mage/warrior at level 2, i've killed umbra and took her sword + armor at level 1, and just looking for stuff to do. (i'm playing on the 360 so mods are a no-no :()
How exactly did you manage to kill Umbra at level 1?
you can kill her at any level. you just don't do the mission. as to actually how. I'm guessing putting the difficulty slider right down to 1

attack the gaurds in any city only to find the game is not like fallout 3 and you cant take evereyone.

Jokes aside, I dont like exploring in oblivion but its the only way to get most sidequests. Join everey guild. It helps alot.

How did you kill umbra isnt she like, the hardest enemey in the game?

Oh, do the shaeogorath sidequest. Its hilarious.

Critical Arrow between the shoulderblades?

It realy isn't very hard.
Unless you have barely any archery skill, which seeing as he was a mage/warrior, I'm guessing he didn't.

And at level 1, attacking her with a sword or beginner's spells is suicide.

Of course you could probably just run her through the traps......I forgot about that. =]

Never played oblivion myself, but my ex found a guild called the guild of assassins, or something like that that had a very strange requirement to get into, and was very fun to play thru the missions of once you did get in.

The requirement was to kill a sleeping male npc (any random guy) at night in his own bed. Then sleep where he died, and you get visited by some prick who gives you a mission to kill someone undetected (a specific person this time) and then visits you again in your next sleep after the mission is complete and gives you the loacation and key to the guild HQ.

Quite kool.

With some luck, you can attack Umbra and run to the nearest guards. There's also a poison gas trap in the ruins which you can 'trap' her in, she'll slowly die in the gas while you circle strafe around it.

Personally, I did it a lot easier with a simple mod and a poisoned apple.(she never eats, and has no AI beyond "attack when attacked or on " so the mod gave her 1 hour per day in which she eats)

Pick a fight with an imperial guard and see how long you can last against them resisting arrest. See how high you can get your bounty to go.

Might be an idea to save first though...
Over 100,000 coin.
Op, kill some wolves and bandits, sell their stuff (pelt in the wolves case) and explore. Also, join the Thieves Guild ASAP so you can sell stolen stuff.

fruit racing, go to the top of a big hill and roll loads of fruit down, see which reaches the bottom first!!! it never gets old, until 5 seconds or so have passed
That is actually pretty fun if you use the dupe glitch to give yourself 10000 pieces of fruit.

Making fruit avalanches also never gets old, well not until you X-Box slows down to a standstill and is incapable of plotting the course of any more pieces of fruit.

Another fun thing to do is to make enough pieces of enchanted clothing to give yourself 100% Chameleon, then carry a dead body around town, making it wave to people a la Weekend at Bernie's.

Of course that is only funny to the player, unfortunately the NPC's don't react as much as they should do.
and when you get bored of this you can punch guards repeatedly and laugh as they completely ignore you

Definitely the arena. It's a quick way to level high enough to a comfortable level to start the guilds.

Get to level 20 and go to the Roxy Inn, it is north of the Impirial City and there is 3 people in it. One has a full suit of Ebony or Deadric armor and the other 2 have full suits of glass and they go down easy.

Hunt. I know it isnt your class but go freelance hunting, evan though i don't know how fun it is without a hunting dog (Mod) but get yourself a bow, some arrows and a low level detect life necklace when/if possible.

Beat the game.

With vanilla Oblivion's broken difficulty scaling, it's completely plausible to finish the main storyline at level 1 even.

That'll just make it boring.
Unless you're worried about this, yes.

If I recall correctly, by level 2 you should be able to do Sheogorath's quest. That's always fun.
