Bug, fighting or dark type pokemon. I would guess that undead would be either ghost or dark type so I'd just be covering all of my bases. As for the specific pokemon I'll go with: Absol, Primeape and Beedrill.
Big Daddy + Stranger (from OddWorld) + Engineer
Build a fort, lay some furry mines, a sentry, and if they break in, Big Daddy will decimate them, Stranger will incapacitate them, and Engee will whack 'em in the head

Francis because they are super zombie killers
Ellis for entertainment
Engineer because he has a sentry and we can just live through the apocalypse if he makes a food-making-dispenser

Reven from KoToR, (light side) because, well, Force powers are always useful in any situation, and the lightsaber is the ideal zombie killing weapon.
Tali, ME, because she has an environmental suit that would render her near invulnerable to the infected, and she kicks ass with a futuristic shot-gun that never runs out of ammo. plus her natural tech and survival skills would probably come in handy.
HK-47, KoToR, for the Lulz and the fact he is an immortal machine, and killing meat bags is his passion any ways.
