Stickman fighting games are common on Newgrounds, it's hard to guess exactly which one you're looking for. There were two games I do not recall, but remember bits and pieces of. They were both Playstation 1 games and I believe both were on demo discs at the time I played them. Those games were:
One is where you played as a robotic tank that was olive in color, with steel color claw arms, and tank tracks for legs. The character had an angled, slanted front, and it was an arena fighting game.
The second one was where you play as a flying futuristic car where police were chasing you, prompting you to shoot them where they explode. At one point you near a billboard where a beautiful woman on it before she changes into a skull and skeleton as there is a laugh of a woman which sounds disturbing. At the final point of the level, you go against some green ship, which I always died at.

About 10 or so years ago I played this game called either as(z)uma or as(z)ura. It was japanese style RPGish CD ROM for PC that ran on windows 98.Pretty sure it was 98.
Anyway the game went something like this. *Spoilers: Ye been warned*
Three characters (classic fighter sorcerer and ranger demon hunters sort of thing) on a quest to find and kill a demon (maybe devil himself not sure). Each with their own reasons (revenge, disgraced warriors team up to defend princess I think?)
*One of the characters (male) had blond spiky hair, pants and no shirt. The other male had long brown hair and blue robe/komodo. The female (Raina is the princess I think) had a red komodo and long brown hair.*
The whole point of the game was to fight through blacked out maps (that became revealed as you explored) to fight monsters for better and better loot. After side quests (find this stuff so I can make you this potion sort of deal) and a pretty good story line you find a specific sword that you need to kill the demon you are hunting (whom you have to go to hell to find).
The graphics were pretty good at the time XD and you played as all three characters at once (if I remember correctly) and the view was kinda slanted birds view. I mean that you see the characters as 2D but kinda see the map from above (because you can see lower/indented parts of the map that you can later move 'down' into.) There tons of monsters to kill and treasure to be found. I think at one point you have to kill a vendor because they turn into a demon and try to kill you. It was fun piecing together the different bits NPCs told you to find the demon lieutenants that'll lead you to the ultimate baddie.
I do remember the beginning cut scene was in some sort of wooden japanese hut where raina is attacked by demons and saved by the two dudes. I remember not skipping it a lot because it was pretty bad ass.
The almighty google doesn't think this game exists... but I can tell you that I didn't spend countless hours on nothing. I never finished the game so I'd really like to do that XD Anyways I don't want to rabble on and on so if anyone knows what I'm talkin about I'd really appreciate anything pointing me in the right direction.

It was an old 3D tech demo, maybe from the 3DFX Voodoo days or even before. I'm thinking very early 2000s.
Anyway, it was 1st person 3D, and you explored a strange island with not much vegetation, but there were local alien things, almost looked like the guy from Oddworld. They had little huts and villages (not more than a few tents), and you could enter some caves.
I really want to find this. It seemed to me it was the coolest 3D environment to explore at the time. There wasn't really anything to do in it, but I made little quests for my sister to play (like find the well behind the hut, or things like that).
I also have the feeling that this tech demo was paired with some other tech demo (like on the same CD or something) that was also pretty cool, but I have no idea what that other one was.
And yes, I've searched all the old NVIDIA demos on their site. It wasn't any of them.

I am not 100% sure if it was on the PS1 but it had good 32bit graphics so the closest console i think is the PS1.
the game i used to remember was like you don't climb on a dragon when you play it, when the game start you fly on the dragon with a man on it, and if you died the man goes down with his dragon.
So its like flying dragon shooter i am not sure if you can climb off the dragon after some part of a level though.
