Schizm: Mysterious Journey isn't totally great, but it's a technical marvel that I think is worth playing. AVOID THE SEQUEL.

Also, Myst. Play Myst. Do it.
The Myst games have a very particular appeal. If you want puzzles(sometimes really obtuse) in a shared world and a fairly relaxed atmosphere, it's the game for you. If you want a lot of context for what you're seeing/the puzzles you're solving, it's not really what you're looking for. The books give backstory and context to the characters but not much of that actually makes it over the games(and if you have to go somewhere else to understand the context, you didn't do a good job).

And I say that as someone who played the first 3 games(I liked the third one the most) and read a couple of the books.

Also there are like, 5 Broken Sword games now, though I can't vouch for the quality of 4 and 5 (3 was definitely a bit meh).
4 is kinda crap and I honestly can't recommend it to anyone. 5 is a mixed bag, notably consideirng how it was made in two parts. The first part, set mostly in Paris, is okay with some good bits. The second part, where you actually get to start traveling around is where the game actually hit's it's stride. I'd still recommend it over 4 and maybe 3(I actually kinda liked 3, despite it's flaws).

5 does remind me of a larger version of 1 in some ways. You spend a fair amount of time(Part 1) hunting for what is essentially a treasure map, whereas in Part 2 you're following the clues on the treasure map.

Obsidian, Lighthouse, Timelapse, X-files Adventure Game, Star Trek TNG: Final Unity, Timelapse, Bad Mojo. Some of those are first person, so may not be your bag but all are worth checking out.

Star Trek TNG: Final Unity,
That reminded me. Stat Trek: 25th anniversary and it's sequel Star Trek: Judgement Rites.

Essentially the Original series done as an adventure game with occasional arcadey bits(A few times require you to pilot the Enterprise in Space Combat). GOG has both of them cheap, if you're interested.

They also got the original cast to come back and do voice acting.

Everything that Wadjet Eye has put out. I see you've already played Gemini Rue, but they've done a lot of other great games. Resonance is my personal favorite from them.

Also, the Tex Murphy series, if you don't mind FMV. It was one of the few FMV series that was genuinely really good. Same with The Journeyman Project.

Oh, and definitely finish the Broken Sword series.

I am also going to second/third/whatever the suggestions to play Myst and The Longest Journey (and their sequels, natch).

Some other random ones I recommend:
The Black Mirror trilogy
The Deponia series
Dropsy
Harvester
Inherit the Earth
Sam & Max (both Hit the Road and the episodic Telltale ones)
The 7th Guest and The 11th Hour

All of my recommendations here are on GOG.

Get The Neverhood Chronicles. No questions, just do it. It's one of my favorite games of all time...and I'm not even a big point-and-click adventure fan. It's truly an experience like no other, a hilariously surreal romp through a claymation world oozing with charm and creativity. The soundtrack alone is worth the price of admission, with its baffling amalgamation of jazz/folk/bluegrass and gibberish vocal accompaniments.

The only major problem you may face is trying to procure it. Only 40,000 or so were sold, and there have been no official releases on a digital storefront like Steam or GOG. This can result in copies of the game garnering a pretty penny online. There are other annoyances like compatibility issues with modern computers and some non-intuitive puzzles towards the end, but those can be fixed via workarounds and walkthroughs respectively.

Most of the ones I'd recommend have already been suggested, but the Legend of Kyrandia series is well worth playing. There's 3 of them, I think.

Yep, after reading the OP's list those three were the only games I could think of as well.

Even though everyone pretty much already mentioned my recommendations, here are again.

King Quests 5 and 7
The Legend of Kyrandia series
Zak McKracken and the Alien Mindbenders
The Longest Journey
The Neverhood

EDIT: It Came From the Desert (although it was more like a really old visual novel with action segments than a point and click adventure game).

You've already played all the ones I could recommend except for playing the rest of the Quest for Glory series. Personally I love 4, mostly for the charming characters.
Really you want to play the whole series, in order and just carry the same character through the whole thing. I always played a thief and dumped my starting points into magic -- there's a lot of use for spells as a thief, you can still thief sign, and you can even do WIT in QFG2.

4 was really buggy back when I played it, but it's fantastic anyways. Always had a soft spot in my heart for 2 though.

The cave maze in the first game was such BS though.

Also, the Colonel's Bequest is great, especially the degree to which it will explain to you exactly how little you actually figured out over the course of the game.

When I played it I stared out as a mage, but when I got to the end of 2 I took the offer to become a Paladin. So I could then fight as a warrior, but still use all my mage spells. It really only came up when solving certain puzzles, but it was still really cool.
Yeah playing 4 was a challenge since I was playing it on a more modern computer. I had to use a tool that simulated a much slower processor to get through the swamp bit. It was choppy as hell and the sound screeched, but according to documentations I read it was the only way to get through it on newer computers. I loved the characters though and how you defeat the villain by telling the ultimate joke.

Just came out recently, but I highly recommend "The St Christopher's School Lockdown". It's really, really good.
