You mean it isn't 2 episodes of text splashes over a screen that hardly references the harrowing events from the episode just before them, and has the lamest, most pointless philosophic bullshit?
Might have to watch that.

I agree with everyone that mentioned Cowboy bebop and Darker than black.
One of the best endings in my opinion was Tekkaman Blade (a.k.a. Technoman Blade). Its probably most talked about endings amoungst my mates, considering how old that anime is thats quite an achivement.

Do anime movies count? If yes, Ghost in the Shell ("Ah, the net is vast.."). It does have roughly the same ending as the original manga, after all.

I only watched the first Evangelion movie, but I didn't think it was much better than the anime. No, scratch that, it was better than the last episodes of the anime, but it still didn't make any sense. Don't plan on watching the rest of them, there's telling a story and then there's wasting my fucking time.

(If you are crazy enough to do this, read the manga...The main character is less of an asshat, and it will take a lot less of your time to get to the ending... The end is slightly different though, so if you do go this route, watch the ending on youtube too.)
As for my choices, Gurren Lagann's ending is just about the most epic thing ever created, and Darker than Black came up pretty close too.
The Lucifer and Bisquit Hammer aka Hoshi no Samidare had me in tears all the way to the end and managed to have both an excellent final battle and wrap up all the loose ends of the story in one nice little package. Shame theres no anime for it (YET!) and id deffinately reccomend reading it. Its funny, sad, heartwarming and action packed with a sort of monster of the month thing going on.
Code Geass. The fulfilling of the Zero Requiem wan awesomely sad, yet joyful. The ending of a masterful and selfless plan. Very Machiavellian, yet utterly selfless.
