My personal choice is the On Rails meteor shooting section in Dead Space.
On what difficulty were you playing?

Operation Flashpoint 2 for me. I just can't complete the second mission, I just can't. I always either die or the timer runs out. I feel miserable.

How is tht game btw? I feel like purchasing it (mainly for the coop, but it does look good), I just feel the realistic gameplay might turn me off sometimes.
The game is great and the co-op is extremely fun. A nice, refreshing change from those run n' gun games. Sometimes, the friendly AI can annoy you (for example, the medic doesn't treat the wounded soldiers until you tell him to do so), so I suggest you to play in coop.

Not as realistic as ARMA, but still good.

Golem Sisters from Chrono Trigger. 2 Bosses on the same time, and both of them got an attack that halves your HP.

Stalker. I can't see shit at night and the flashlight you get can as well be a candle. So there are these bandits on the middle of the road who must have some kind of radar in their heads. They see me every time! And they dont even have night vision!

Most racing games, especially BurnOut (I noticed) start cheating when you've got a huge lead. Suddenly the AI gets a massive speed boost out of nowhere, and they're on your tail again.

Also CoD4 on Veteran, homing grenades, what the hell?

Pretty much any fighting game will bring in the cheating AI after level 3. It only gets worse with the final boss, to the point that it's less a game of skill than you trying to get the AI to make a mistake first.

F-Zero GX's story mode cheats pretty blatantly too. It's already hard, but the AI has a supernatural ability to get itself out of trouble and boost right past you when you're about to win.

As soon as I read the title this immediately sprung to mind as well. I quite enjoyed the game but it must of taken me 20-30 attempts to pass this bit. Much swearing was involved.

far too many, the obvious ones are any fighting game, like tekken, or soulcalibur, able to do any move at any time perfectly

but also shooters. they have infinate ammo, most have no reloads or overheat, and depending on the difficulty, almost homing bullets.

oh and instant perfect grenade calculations, including cook time

I was never killed by grenades on Veteran, at least not any more than normal. What got me was how the enemy targeted me and only me 100% of the time. And my allies all stayed behind me, and never fired a single round.
It turned CoD4 into Halo [Minus the super-jumpy-shieldy-parts].
I always felt cheated when 12 of my guys are shooting at them, and they all decide to shoot my foot that's accidentaly sticking out when i dived for cover, and i was trying to regenerate health... and they're 2 klicks away...

Well its vital for burnout, you have to keep the battle up, or else YOU'LL have to slow down, and of of course you wont, so you'll just complain about it l8r... That's why there's speed boosts, to keep the action, but there are other parts that cheat... Those freakishly amazing reaction times to walls...

Besides the already mentioned Seth from Street Fighter IV, most GTA IV car chases are so strictly scripted that the "OH, COME ON!!!" is ludicrously frustrating.

In those cases, no matter the fastest car you have, your victim will be always ahead of you. But i'd like to note a chase in which, in a motorcycle chase, I shoot more than one thousand bullets to my victim's body and vehicle, and the guy was simply inmortal until the game said so.

I was fighting willington the hardest general and he was on his last leg and apperntly he has norse gods in his army because one guy took down my army of 22 and fucking SCREWD ME OVER...

I really, really hate final bosses who have an invincibility pattern, you level grind til numbers lose all meaning so that you can kick the final boss's ass, you get in there and you are really taking the fight to him, then halfway through he becomes invincible for a few minutes, with devastating and impossible to avoid area attacks that can decimate weaker members of your party. The thing that annoys me, is if you have done the level grinding to extremes these invinciblity patterns just seem to be there to flesh out the final fight, iygwim?

There was not a single Jamaican in that game, and you obviously cant aim for the head, Headhsot= Insta Kill in Uncharted.
First up, what difficulty were you playing? On hard and crushing, it's possible for them to take point-plank shots to the face before dying. This wouldn't be such a problem if the game weren't as pistol-centric as it is; they're mandatory most of the time.

Second, I'd like to present the generic voodo displays that can be found in the church, as well as a none-too-infrequently inserted Jamaican flag. If you're Jamacian, I apologize for somehow offending you.

Third, why on earth do you sound like such a troll?
