There isn't a subgenre of metal I can really say I like except maybe doom, but apart from folk, power and progressive there's a few bands in every subgenre which I like, unfortunately they're surrounded by massive amounts of crap.

My favourite metal bands are Sabbath, Electric Wizard, Nortt, Converge, Cryptopsy and Evoken. Slow depressingness FTW!

That does sound good. And I think Disciple might fall under that area...I know I've heard violins in some of their music.
I love Nightwish, but I wouldn't really classify them as any kind of metal. The guitars are there, and they are heavier than what can be considered metal on Scuzz TV, but when I hear them there isn't much of a metal vibe.

Phantom of the Opera rules, but it ain't metal.

Well, I don't really listen to metal that much, but I like Dream Theater so I'm gonna vote Progressive Metal.

Also, Die Apokalyptischen Reiter are awesome (mainly their later works). They used to be classified as Death Metal (back when I didn't like them) but have changed significantly since then.
They completely reinvented themselves and that's when I became a fan.

All That Remains isnt even close to Deathcore, it's Metalcore, and pretty lame Metalcore at that...

Experimental, Mathcore, Avant-Garde, Progressive and Technical.
I tend to hate anything that's been done before, anything that sticks to convention, and anything that isn't original and creative.
I usually like one band of a particular genre, then when I hear any others it just sounds like more of the same.
For instance I like Avenged Sevenfold but any other metalcore band I listen to, I can't get over the similarities. I realise they didn't invent the genre, but they're the first I heard so in my mind everything else is just a copy of them.

I consider myself lucky, then. I don't have to understand the lyrics to enjoy the song (with the voice as a particularly expressive instrument). Which might explain why a decent chunk of my music collection is in Japanese, Spanish, and Swedish...
I have many songs in Japanese, French and Swedish, myself. What I meant was that the lyrics are garbled and they just add a layer of noise to well, pretty spectacular noise. And I do realize that Metal isn't about lyrics, if you want meaningful lyrics go listen to R&B, it's about, well, everything else. I can't be concise, it's farking late here. I dunno what I'm still doin' up, Oh Jesus! It's 3:44 here. Christ.

Any metal will do me. Except power and nu metal. I hate nu metal and I just dont like power metal.

Symphonic would be an additive descriptor, not a genre per se.

If you listen to enough of their songs, you can eventually understand Metallica's lyrics; it's a bit like Ozzy Osbourne in that respect, I guess (I mean his songs, not the jumbled-up way he talks all the time). I think "Unforgiven" and "Fade to Black" probably have the clearest lyrics.

Metallica has kinda shifted styles over time. Metal fans and mainstream critics tend to say that 90s Metallica is kinda crossing into "hard rock". Their songs from the 80s are more obviously "metal".

(Maybe someone who's more of a metal fan or more of a Metallica fan will correct me; I identify as neither, I just have songs I like and songs I dislike and Metallica has made some of both.)

Speaking of "fantasy metal", I feel obligated to say this any time the matter comes up: the best best song about wizards is Rainbow's "Stargazer".

I like tons of different kinds, but my favorites would be Metalcore, Nu-Metal, NWOBHM type oldies, Emo (to the tune of Escape the Fate, though that isn't really metal), and Symphonic.
All-time favorites would be a tie between Nu and Metalcore.

I find most of the older metal bands boring and I really don't care for Metallica.
