Yes, the material may be unbreakable but the knife can cut through anything, so i'm gonna try pull things out my ass here so bare with me, the material is unbreakable but not uncuttable.

Sounds like the old unstoppable force vs immovable object design. Though if the force is unstoppable, then the object clearly isn't immovable, and vice versa.
