If you want to use the term graphic novel then the only thing that it would fit is those novels that have the occasional picture every couple pages.
Some of Eisner's work might qualify (since I think he coined the term "graphic novel"), but Maus is non-fiction. I'm fairly certain non-fiction can still be referred to as a novel, given the format. While I think there are books that can rightly be called "graphic novels", I think the term is used to give the medium more "legitimacy" so bookstores and my older librarian colleagues can be convinced to stock comic books.
The Mass Effect comics are surprisingly good considering they were written by a video game writer. The same can be said about Felecia Day's Guild comics so far...
