A recommendation for the fries (or anything fried really) is to heat them up in the oven, or toaster oven if you have one, they will generally stay crispier than in a microwave. This does take longer though, so it's up to you.

Some do. Resting allows time for flavors to reach out across the dish. Marinade and Deviled eggs can be prime examples. When making either I will add garlic. You really don't want garlic "bubbles" of taste as they will be extremely potent and make you feel like your taste buds are traveling through a mine field. Resting for a night or two fixes this and evens the flavor out through the dish.

I will say this isn't the best for everything though. Picking up the Deviled eggs idea again there are a couple things like bacon that I will leave out until the day of eating. Bacon will jump in front, hide for a moment, and then come back at the end. Very cool effect, and there are several recipes that will do this for several dishes, but if left to rest for long the flavors will mesh and be constant.

There are also several food that it doesn't matter in. Pizza is a prime example. The oil from the cheese and the grease from the pepperoni come out and allows flavors to permeate everything on the first cooking. Everything after that (for the most part) is just reheating.

Cold pizza is infinitely more delicious than freshly cooked pizza for some reason. Also, sausages.

A lot of foods aren't as nice as leftovers, though. For instance, potatoes. And pasta. And rice.

people think pizza or curry are better the next day but i've never had leftovers and thought it was better than the first lot. it can still be nice, sure, but better? doubt it

I love pasta's as leftovers. The sauce usually thickens a bit, even after heating it in a microwave, and somehow the texture from the pasta is better too. And the weird, slight change of flavour, luckily for the best.

Then again, when I'm around food usually doesn't last long enought to become left-overs.

Pizza and mac? I guess, I like ti fresh personally.

Though chilli and funeral potatoes taste great the day after they're made. (funeral potatoes for those who don't know what they are, are basically cut/sliced/diced/etc. potatoes smothered in some kind of cheese mixture with crumbeled chips/bread/etc. on top. It is a heart attack in the form of food but it is delicious.)
