FF12 if they redo the combat system and voice overs. I want dual wielding damn it and a main protagonist that isn't utter horse shit.

Trying to 'fix' any of the FF games with better quality graphics is kind of like 'fixing' a broken leg by running over the patient with the car that hit them.
*slaps head" Why did you have to mention Final Fantasy? Every time someone mentions any specific Final Fantasy, it becomes such a bitchfest with the people who liked it, people who hated it, and the people who thought 7 was better.
Id go with Deus Ex if were just talking graphics. FFXII still looks quite good, but Deus Ex... Deus Ex looks like a game developed in the late 90's. That said, I do find that, if the mechanics work well, you totally forget about the graphics once you get into the game.
I would like to see a true version of FFXII though. I did love the game, but it had some fatal storyline flaws. Id like to see the original writer finish the story (he got sick during development iirc). Id like to see Rex switch places with Vaan since he was an infinitely more interesting character. And id like to see Penelo die a gruesome death early on.

Some of you seem to be remembering XII a little differently to me. I decided to boot my save game up again today to compare how big its world was compared Xenoblade (of what I've played so far)
The graphics were, bearable... This was on a LCD 46" TV and I remember it looking a lot worse than what I saw today but the resolution is still too low and it starts to hurt to look at it after a while. Deus Ex on the other hand can just be set to HD resolutions in the options menu. So I'd vote on XII for this unless you emulate it on pc and run it at 1080P then it looks really nice. Although Deus Ex still looks like garbage even at high resolutions, yes it made a very distinct atmosphere but there was something about the graphics that turned me off of it (and the sloppy gameplay). Seriously though, I have a MUCH easier time playing something like Scorched Earth or Final Fantasy VII over Deus because of the disgusting looking character models and sloppy realtime combat.

While I do love FF XII, Deus Ex had horrible graphics even for it's time. A lot of people haven't played Deus Ex yet and a Deus Ex HD remake would probably blow their minds. FF XII however had above average graphics for a PS2 game and is comparatively less old and as such will have a lower impact than Deus Ex will.
Wy FFXII?? Just seems a little bit random to pick one of the more recent releases and besides the game still looks great.
The graphics are the last thing that need changing on that game it had so much potential - awesome combat system and it was relatively open world (I know) and yet all that potential was destroyed for me by a half arsed attempt at a story that wasn't even that bad if they just got the characters roles in the right order. Vann is not a main protagonist he has nothing invested in the story, he's comic relief at best or ideally serving as the character who 'tragically' dies spurring the rest of the characters on in their quest.

Deus Ex would be nice as long as it was the same game. A guaranteed way to rustle my jimmies would be to remake Deus Ex and strip out it's RPG features in order to "Make it appeal to a wider audience"
FFXII all the way. Easily one of my favorite games of all time.
