Because 'You give the reality around your foe a command and it responds. Space and time twist and bend as your enemy is rend apart by the forces of creation' is way cooler than 'you swing the sword around you really fast and decapitate your foe'.
Magic classes tend to be versatile in their spells and abilities. You got DPS, buff, debuff, AoE and all in between, whereas I feel like there are only so many ways you can swing a sword or throw a dagger. Usually you need to speacialize pretty heavily with fighter-classes, choosing only a weapon or two to attempt to master. This means choosing between range, DPS, defence and other modifiers early on and then being trapped by those choices. With magic you can customize your spellbook as necessity dictates and find combinations that work for your particular style of play.
