Have you missed the concept of Palpatine's apprentice always slaying the old one? Anakin killed Tyranus and took his place as Vadar. Luke would have turned had he defeated Vadar in the battle at the end of the film. Also no one says there can ONLY be 2 just that there are always AT LEAST 2.

I always just assumed they would have changed that after Return of the Jedi. Luke and Leia are now the only two Jedi responsible for rebuilding the organization, and Leia's already in a relationship. Sure you can be trained to use is it but you couldn't do it as well. You wouldn't have the finesse and/or strength that comes with being attuned to the force. Moving on, there is more you can do than just throw things at your enemy(though that would be fun too). My plan was to collapse their lungs or make an aneurysm rupture. I'm not getting technical. Getting technical would be looking up lightsabers on Wookipedia and going "See?! you CAN'T use a lightsaber without the force!". I am just thinking looking at the pros and cons of each.
