Well it is a sandbox in the true sense of the word, so you do really have to ..craft your own fun
Example:
When I was bored of my manor, I built a jockoff tower on top of it. When I got bored of that, I built a portal to the Nether in a smaller, adjacent tower. When I got bored of that, I sailed for about half a minute and found a small peninsula covered in trees, and so was born a forest log cabin.

I spawned in a vast tundra, so I wandered and swam and climbed until I found a little island, unpopulated by anything save a couple of sheep and some trees[footnote]I later found out this isle would become a veritable Ark of animal activity[/footnote]. Here I built my fortress, which later grew into a strange wooden castle. Having established a large (and I do mean large) mining system beneath the island, I found myself with enough iron to make a little minecart trail around the perimeter of the isle. On one of my circumnavigations I spotted a large overhang some way away, and set about making a snow villa atop it. Then I built a lava waterfall to cascade over the side. Still in possession of an inordinate amount of iron, I broke the loop of my island track and instead made it a fast-travel system between the snow villa and the isle.
And that's where I am now. It's very much a game about 'making your own fun', but if you can do it right, it'll keep your mind entertained and your creative flair burning for days at a time.
Incidentally, my next project is a small subaquatic chamber, purely because I can. It's proving quite difficult.
