I just had a lovely rare fillet steak, in a brandy and peppercorn sauce. Omnomnom.

Edit: I just realized that some people might not know what 'Blue' steak is.

A 'Blue' steak, is when it is rarer than rare. It's literally thrown onto a pan for 5 seconds (if that), flipped, then served. This causes the surface of the meat to be slightly browned, but all of the rest to be almost completely raw.

Medium rare. Any further cooking strikes me as pointless. Unless you're making fajitas, in which case it's acceptable.

Medium Rare is my favourite, not too bloody, but not too dry, just perfect

Well done, but I'm extremely picky about the quality of the meat (and the method of cooking. I don't like a dry or tough steak any more than most people). In my opinion, most beef is better off ground up or slow-cooked for hours into a stew.

Medium rare. Cooking it any longer than that is a waste of a damn good steak if you ask me.

"But it's so bloody!"

Wrong. That isn't blood, it's collagen.

I don't like beef steaks, I like pork steaks. The only beef that I eat is grinded meat like the kind you put on burgers.

Medium rare. Nice & juicy and comes apart without too much hassle.

I enjoy one every thursday with a nice cold pint.
