Probably. I remember playing the first Dark Souls (until I eventually quit due to frustration) and thinking that I would LOVE it if it was just a tiny bit more forgiving. I loved the setting, I loved the non-linear gameplay, I loved the story, I loved the monster designs (and how can you not love Wyverns that breath lightning) but it was just that tiny bit too difficult.
That may not be true to the spirit of the game and the difficulty was somewhat refreshing but that's not why I enjoyed it and I think it's possible to make it a bit easier while still preserving the spirit of it. I'll admit that most of the difficulty in Dark Souls is more the challenging kind than the unfair kind but I can still think of a few moments when the game was more trial-and-error than difficulty and it pulled a couple of dick moves that could have at least been a little less harsh.
If you prefer the brutal difficulty of Dark Souls good for you but, as long as normal mode still exists in DS2, having an Easy setting is hardly going to ruin the game.
