Easy.
TIE Fighter followed by the Jedi Knight series (never played dark forces so...) and both KotOR games.

I'd go with battlefront. At the very least it's the one I had the most fun playing. Unlike the Star Trek series there are quite a few good Star Wars games, but like Star Trek there are a lot of bad ones.

EDIT: Every time I go into my local GAME I'm really tempted to buy "Star Wars: Best of PC" which has most of the games mentioned in the OP and KOTOR. It's £20, but I've never got it. I already have KOTOR and I had Battlefront on the PS2. If it had X-Wing Vs TIE I'd get it. THAT's a game they really need to put on GOG.

Jedi Outcast. The lightsaber fighting was better than anything the Force Unleashed had to offer (in my opinion) except in the multiplayer mode where the bots (this being the days before online play was not only expected but demanded by everyone and their grandma) didn't seem to grasp the masterful-jump-around-acrobatic-funtimes style employed by the Reborn in the story mode. Still not too bad, though.

Jedi Acedemy tightened up lightsabers a bit by giving the option of a saber staff and dual wielding and fixing force grip's issues from the last game. There was also the pick-yer-mission story mode, but some missions were a tad ridiculous. (the Ultra-rancor, sand worm, and ghost of Ragnos? Can't call it boring, I guess) Unfortunately, the multiplayer maps all lacked Outcast's elaborate design like in Narr Shadda streets or the Death Star levels. Then again, if I'm really just there to lightsaber fight, exploration's probably not a priority.
Personal taste, perhaps?

EDIT: Just remembered Battlefront II, which was fucking awesome. I stick with Outcast because the Battlefront games felt more like playing soldier in a Star Wars setting. It's a bit like Dragon age not being a Lord of the Rings game, if that makes any sense. Also, KOTOR I and II were fun, (as Bioware RPGs often are) but I don't find myself revisting

Either KOTOR or Rouge Squadron 2 to be exact. KOTOR is great for many reasons while Rouge Squadron 2 is very immense. The Battle of Endor level really fult that you were in the battle itself.

OT: Chalk up another vote for Outcast. I still replay Outcast and Academy now and again. Love it.

Republic Commando, Battlefront(s), Jedi Knight(s) TIE Fighter, Xwing, Star Wars Rebellion, Empire at War, Rogue Squadron, Jedi starfighter are all good in my opinion, but need some changes to get better.

Empire: Bigger armies and battlefields and more battle options(aircraft, defences etc)

TIE Fighter/Xwing: A remake with more awesomeness.

Commando: It felt short. MOAR STUFF please.

Battlefront(s): fun, but repetitive. More/bigger maps, and some more options in the dual screen galactic conquest would be nice (more planets, buildable defences on planets etc -> maybe a mix with empire at war? -> empire building game with fps fighting? Like mount and blade(sortof)

Jedi Knight(s): fun, I guess. II more than academy though.

Rogue Squadron: One of the first star wars games I played, fun, but needs more playable ships and space combat.

I could go on, but in the end, I think I played KOTOR the most for the fun it held. It could do with the jedi knight combat system though. And I want to buy a star destroyer* with crew and raid trade routes and space ports, dammit! I wanna be a pirate.

Make a game with KOTOR-style rpg-elements and story, Empire at war sized galaxy, Jedi knight fighting style and freedom from (non-lucasarts) mount and blade and I'd happily buy the game.

Jedi Knight II: Jedi Outcast is my favourite. A good blend of first person shooting, third person lightsabering and plenty of force powers to choose from.

Shadows of the Empire.For it has everything a good Star Wars Game should have. And for nostalgias sake X-Wing. I guess its the 2 games i played the most hours summed up.

Either Rogue leader WITH the cheats which made it awesome(er) or Clone wars which isnt in your damn poll and by most normal standards was the shits...but had great splitscreen multiplayer
