Polearms, especially Halberds... but if I could use just one weapon in any and every game then I'd use a Halberd sheathed in a matter disrupting energy field with a semi-automatic .75 calibre gun attached (that fires Rocket Propelled Armour Piercing Depleted Deuterium High Explosive ammunition)...

I'd go with the classic RE4 and 5 combo of using guns (probably a handgun) and then punching or kicking the shit out of anything that gets too close.
