Colour me curious; how does one make such a distinction of the material? Are there certains studios known to produce content along these lines or certain actresses one can use as a yardstick (so to speak) on this?

Very, very few prostitutes are in the role they are because they want to be, and that's more or less their point; it isn't rape, but it is as close as one can get. They are arguing they don't want the sex, but consent to it for the money they usually are in desperate need of.

Stereotypically, porn made with the mainstream woman or lesbian in mind, focuses more on tenderness, foreplay and intimacy. You may notice that the bulk of heterosexual porn, starring men and women or just women, skips actual foreplay and the entire film consists of sex acts in varying degrees of extreme. Porn made with women in mind, again lesbian or otherwise, is often slow, sensual and more erotic than dirty.

EDIT: Also, yes, there are indeed sites that create porn solely with lesbians or heterosexual women in mind. There's quite a few out there and I enjoy the content of some of them--I feel it more real and intimate than the usual "guy fucking a screaming woman" porn.

They're only different because in the U.S. one of them is illegal

(Interestingly, Australia cops a lot of flack for being censored and the like, especially from the U.S., but prostitution is legal in all Australian states and in very few American states.)
