Castlevania has no Icons beyond the name (everything behind the name gets redesigned every release), Final Fantasy has chocobos, Katamari has a couple, and CoD is any other war depiction. It could be World War Future (Game does not exist) and use all the same props. No icon there.

Rollercoaster rides? That's not the first thing I would put in a video game theme park. What I'd put in a videogame theme park is tournament rooms for console and computer for various games, virtual reality games, retro arcade halls, racing simulators, LARP games, it's about video games, after all!

A Metal Gear Solid ride would be cool. The car could sneak around and hide behind enemies and then run away super fast when it got "caught". It could also have the microwave scene from MGS4, in which you would have to get out of the car and push it to the finish while the room's temperature gets hotter and hotter.
