Death note is a guys anime as far as characters go, if he is quite intelligent he will appreciate it, and the characters are not as over-animeised (new word) as code geass.

EDIT: I can't vouch for the dubbed version, but a friend of mine watched it dubbed and he said it was good? (Then again he hasn't heard a subbed version) >.<

Maybe he would like animes like the following:

Fist of the North Star, Berserk, Hellsing, Neon Genesis Evangelion, Lupin the Third, The Big O, Speed Grapher, Afro Samurai, Death Note...

You know, stuff like that.

I'm nowhere a big enough anime fan to worry or care about a dubbed vs. a subbed version. No offense of course, as I understand that a lot of anime fans do, but I never had a problem with the voice acting or translation or whatnot for Death Note.

Perhaps it's bad and I'm just a noob, but pertaining to the topic, I don't think this boyfriend will notice any problems with it.

Well Ghibli movies are always a good idea.
I'd start with Princess Mononoke, as it's probably one of the most mature of them.

Maybe a sports anime? I like Ookiku Furikabutte (a baseball anime), but the main character might will annoy him too much at the start. It's big on character development though, if he's into that.

Make him watch the anime of Valkria Chronicles!
It's got a great atmosphere, and a really good story. It's about a militia group in a neutral country caught in the crossfire between it's neighbouring countries. Ideallic scenery, steampunk-style tanks and bolt rifles - what's not to love?

If were going the movie route then Princess Mononoke and AKIRA are two really good anime movies

Show-wise you cant go wrong with Clannad and Kanon, but I'll just assume your boyfriend is one of those kind of guys that wont sit through romantic comedy type things so don't watch those

If he wants something short and interesting you can't go wrong with FLCL (Fooly Cooly). If your looking for your standard series (20-something episodes) you can't go wrong with Mobile Suit Gundam 00, though the characters are drawn more to the shoujo (girly) style, so you might want something like Gundam Wing or Mobile Fighter G

Another good classic is the Slayers series if he was ever into the DnD sorta stuff.

Studio Ghilbli is the japanese version of Pixar, insanely awesome but not manly in any way...

I suggest (like my previous comment) in getting MD Geist, with an all meat pizza, to really hammer home the manliness.

I'd say Cowboy Bebop was your safest bet, if he doesn't like that - he won't like anime...ever...
But maybe you should start with some "movies" anime like Ghost in the shell or maybe Ninja scroll they are less animeish and more serious. If he likes those go for Cowboy Bebop and Samurai Champloo.

Cowboy Bebop should be fine if memory serves Ed is not introduced until a few episodes in by that time it should not matter.
Could try Darker than Black
or go for a more western style with the Spawn anime

You could start him off with the movie instead of the series, I don't recall there being a lot of Ed in it.

Tengen Toppa Gurren Lagann. Yes it is a touch anime-ish but the end takes pace in space where the people through planets at each other like the worlds best snowball fight.
But if you want a more surreal anime, Trigun is awesome, and Spice and Wolf is good.
Also he should try Lucky Star but that is anime-tastic if only to amplify it's random humor.
