I got my volues from darkhorse up to 23 and its just amazing. As you said the art is unbeliavable! It really reminds me why i loved knights as a kid. And its just the perfect mix between violence comedy and sex.

I'd recommend Gintama, but only after you've watch a fair amount of other anime, as many of the references and jokes it makes involve them. Particularly the likes of Bleach, Naruto, DBZ and many, many more.
Easily the best anime I have ever seen, and I've watched a great deal of them in my time. It's a comedy anime at heart, with no over-arching story as such but it does have various arcs that involve the main characters doing various things. The very few serious episodes are absolutely amazing and some of the fight scenes are breathtaking

Without a doubt, your first anime to watch should be Elfen Lied. It has a great sci-fi storyline, brutal action, relationships, and semi-frequent/well animated tits. What else could you want?
Also, if you dont mind subtitles, try watching Kashimashi - Girl meets Girl. Its a "junior high slice of life" anime with a sci-fi twist. The cute young boy that all the girls crush on gets hit by a crash landing alien spaceship. Near dead, the aliens rebuild him as best they can, but get one part wrong - they make him a girl!
Okay, it not the best story ever, the storyline requires the viewer to suspend their disbelief on more than a few occasions, but the animation is vibrant and colorful,and the story is strongly character based, hinging on the developing love triangle between the three main girls. Hands down, way more enjoyable than Haruhi for a sci-fi/slice of life anime and likely the best slice of life anime I've watched.
On another note, Queens' blade is actually quite good for what it is - a ero/oppai anime. Because of this, there is lots of fan service - cleavage, tits, crotch shots, excessively sexual situations, ect. Likely not what you are looking for from your description, but actually a fairly well made modern anime. All of the stuff made in the past few years is turning into porn it seems.

Deathnote was mind-blowingly awesome. Until around episode 15, then it took a nosedive towards the uninteresting, until it hit episode 25, where I couldn't be bothered any more, and quit.
A lot of people really like Deathnote, I know that, but compared to the tricks/challenges of the first 10 or so episodes, the rest was bland as hell.
OT: I have watched One Piece in its entirety (sans filler episodes). It has definitely been enjoyable, most of the way, even though it's pretty mindless most of the time. Cowboy Bebop is also really cool.
