You're gonna get a million votes for Cowboy Bebop, so I think it's only fair you get at least one suggestion for the anime that inspired it, Lupin III.

G Gundam:Manly men and women doing awesome things with giant robots.
The series takes place in the future and mostly focuses on a worldwide fighting Tournoment.
Its my favorite Gundam.

Tekkaman Blade:And old Tatsnoko anime that started MANY of the tropes you see in most Mecha anime.
Its a simply, guy uses strange ability to rescue earth from a anian invasion, but it does so much with the story and throws in so much heartbreak and drama its one of my favorite series.

Rurouni Kenshin:A wandering assassin tries to leave his past of killing behind, but it wont go away and he tries to seek redemption while trying to protect those around him from the "Ghosts" of his past.
I absolutely LOVED those series, the manga is still my favorite manga of all time to this day.

Samurai 7:A retelling of the 1954 movie 7 Samurai by Akira Kurosawa, it takes many liberty's with the source but, it turns into a great series.

The Gokusen:The daughter of a Yakuza boss is inheriting the family business, but all she wants to be is a teacher.
So while dealing with family issues she becomes the Math teacher for the local High School's delinquent class.
Hilarity ensues.

Saiyuki(Reload and Gunlock):A retelling of the Chinese poem Journey to the West.
It, like Samurai 7, takes liberty's with the story but turns out to be a great series.

Sword of the Stranger:A young boy trying to elude the army of a local lord hires a wandering swordsman to escort him and his dog to safety at a temple.
Basic story, but as they travel the young boy and the swordsman become close and the swordsman's past is slowly revealed, as is the reason the boy is being perused by the lord AND a group of Chinese ambassadors.

This is a movie but i loved it.
Saw it in a theater and it was a experience.

Tengen Toppa Gurren Lagann: an awesome show literally powered by Awesome Willpower
Ghost in the Shell - Stand Alone Complex : A deep, insightful show that simultaneously has enough action to be exciting
Death Note : Great show, mainly about two highly intelligent people playing off/against each other
I can also highly recommend the Slayers series if you enjoy fantasy tropes and funny sword&sorcery action.

Ghost in the shell - Stand alone complex. (english version is good afaik) Its Smart. Takes itself seriously, Doesnt go into "fan service territory" too often, Nice graphics. Nice animation. Very nice plot. Its one of my favorite anime, easily top 3.

Elfen lied. You.. wont get out of it unchanged or intact. In a good (bad?) way. Its really.. something. Go see it.

Legend of the galactic heroes. Its a classic, plenty of space ships blowing eachothers to bits, and a ton of interesting characters and the plot is good too.

Watch Gundam 00 then, far more interesitng than Seed. Also, you and your girlfriend can have fun crying together at the end of the first season.

Well.
I have yet to see a full episode.
:p
And i will admit that its crazier than HsotD.
But so far i like most of the characters.

And at least it knows its crazy...
HsotD seams to try and stay realistic yet do some really dumb things.
But hey, its Zombies.
Enough said.

Spice & Wolf and Gankutsuou would perhaps be suitable to watch as a couple, and are both very excellent animé. Grave of the Fireflies as well, though that one is also a real tearjerker.

As for more general recommendations, Baccano!, Monster, Excel Saga, Elfen Lied (ultraviolence, horror, fanservice), Berserk (ultraviolence), and as always Higurashi no Naku Koro ni (When they Cry) (horror elements)

You really don't see enough Slayers recommendations, it may be formulaic, but it's a formula that works![footnote]I would be a somewhat "nostalgia"-biased source on their quality since they were my real entry into anime, and I thus have them all on DVD (still got to watch the 2 last movies and the OVA's though).[/footnote] For (mostly) light-hearted sword & sorcery comedy animé, this is a great bid.

Anyways, my favorite anime was Fullmetal Alchemist, or Cowboy Bebop.

I would recomend Death Note or Dragonball Z(watch Dragonball first)
Most people know what DBZ is about so I'll explain Death Note.

It's a story about a notebook that is able to kill people called, you guessed it, the death note. Light Yagami is a VERY intelligent student who is bored and finds the notebook one day.

I'll let you watch it from there becuase the Series is amazing! Seriously, go watch it NAO!

Definite additional recommendations on Cowboy Bebop, Gurren Lagann, Baccano, Ghost in the Shell, Serial Experiments: Lain, and Hellsing. Though I will suggest that you watch Hellsing Ultimate rather than the original series. The animation quality is a lot better, it features most of the original voices and it follows the original manga rather than making up an ending from whole cloth that doesn't make a lot of sense. The original series has an excellent soundtrack though.

Also good ideas to watch:
Ergo Proxy - Kind of a mix of Ghost in the Shell and Lain with sort of a Cowboy Bebop feel. Deals with post-apocalypse and recovery. Touches significantly on AI and a number of philosophical themes. 26 episodes
Samurai Champloo - Tokugawa era Japan with hip-hop and urban punk influences. By the director of Cowboy Bebop. Rather goofy and eclectic but also good fun.
Texhnolyze - Post-apocalyptic with some dystopian themes. A lot of focus on mechanized prothetics. By the team who made Serial Experiments: Lain so it is rather strange and can be confusing.
Gun X Sword - A revenge story with lots of giant robots. It feels a bit like Voltron or Gundam if it were made by Akira Kurosawa.

and if you're feeling like watching something bizarre and hilarious, try Excel Saga or Puni Puni Poemy

Shiki is damn good. Watch that. Its still ongoing though but its approaching its conclusion relatively soon.

If your into Eurika 7 go look up Star Driver.

It is simmilar but different to Eurika 7 right down to the giant robot fights and the romantic subplot, also the intro is awesome.

I think it is made by the same animation studio.
