I couldn't stand Eureka 7; have a back up ready. I'll give you a list of ideas, the OP wasn't very specific about your taste.

Conservative recommendations:
Star Driver - fabulous mecha that's running right now. Fabulous isn't normally my cup of tea, but I'm liking SD
The Melancholy of Haruhi Suzumiya - school life, romantic comedy, sci fi amalgam, it's one of the best shows to come out during the 2000's. No matter what anyone tells you there is no season 2.
Durarara!! - modern day supernatural action with noire elements. Best show within the past year.
To aru Majutsu no Index - Action show with superpowers and magic in the same universe. Badass male lead. Season 2 currently airing.

Mixing it up:
Bakemonogatari - Difficult, at least for me, to categorize, but very enjoyable. Quintessential Shaft, if that means anything to you.
Needless - Over the top action show that never takes itself seriously. Gratuitous fan service for both men and women.
Black Lagoon - The most kick ass action show ever made; rather gritty compared to the shows in the OP.
Gurren Lagann - Over the top mecha, and my personal favorite out of the hundred or so series I've watched.
Higurashi no naku Koro ni - Horror series that is masterfuly subtle. Kai and then Rei are seasons 2 and 3 respectively.
Cowboy Bebop - If you haven't watched this then do.

And i will admit that its crazier than HsotD.
But so far i like most of the characters.

And at least it knows its crazy...
HsotD seams to try and stay realistic yet do some really dumb things.
But hey, its Zombies.

Out of the ones Ive seen these are my recommendations

FLCL is great
Trigun is really good
Slayers was the 1st anime I watched and I love it
Elfen Lied I like a lot but it is pretty gory and has quite a bit of fan service
Higurashi No Naku Koro Ni is some messed up creepy shit but it is awesome nonetheless (english dubs are sub-par though)

Humans coming up from underground piloting giant mecha powered by Awesome(not kidding).

Ghost in the Shell: Stand Alone Complex + 2nd Gig
Post Cyberpunk setting, The story follows section 9, effectivly a Cyborg counter terrorist squad. Contains Action, Intruge, Spider tanks and lots of questoning the nature of humanity.

Chobits
Romantic comedy about human like robots called Persocoms also has some questionong the nature of humanity

Eve no Jikan/Time of Eve
Six episodes, Basically Chobits but much less comedy no romance and more introspection.

Full Metal Panic
Romantic comedy, some slapstick, somtimes sereious plus giant mecha

Clannad + After story
Romantic comedy(I like these can you tell?) Snarky delinquent helps naeieve ill girl reform theater club plus helps a few others on the way Amazingly told if somwhat predictable story.
you will never cry more at one series in your life.

Death Note
Smart kid gets a book that lets him kill anyone who's name he putsa in it challanged in a battle of wits with the most eccentric detective outside of Batman, and it is awesome.

Trigun
Pacafist gunslinger in a wild west type setting has a GIANT bounty on his head hilarity ensues

Planetes
bin men IN SPAAAACE! better than it sounds.

Cowboy Bebop
others have said how good it is so I won't

Wolf's Rain(that is the correct spelling)
Story about wolves taking human form and looking for paradise in a mid apocolypyic wasteland,
It's as though those responsible for the plot of Bebop went here...

Samurai Champloo
...And those resposible for it's style went here.
Take Feudal era Japan add a few modern era anacronisems a suprisingly good hip hop sound track and some sereious style and there you go,
Fairly shallow but great fun to watch.

Thanks everyone for the masses of suggestions! :D I'm very grateful. Some I've seen myself before (Like Death Note. That anime was freaking BRILLIANT.. until about half way through when that thing happens. Went downhill for me from there. =/) But on the whole, many thanks. I now need to make a list, research each one and rank what to watch now. Blimey. I'm not short on anime anymore that's for sure.

Definitely go for Full metal Alchemist (or full metal Alchemist Brotherhood, they both start the same but brotherhood follows the manga while the original anime went off on its own)

But they are really very good. My cousin got me into it cause she brought it over and let me borrow the series.

Its about the brothers Alphonse and Edward Elric, who are alchemists (basically its 'magic science') on the search for the philosophers stone (no, don't go thinking its lame just cause harry potter also used the same mythic object, full metal is awesome).

Its a really great show, so i don't want to spoil any of it, but do add it to your list i'm sure its one you'll really like.

Death Note if she wants a complicated story, Gurren Lagann since she's tolerant of mech anime and hoefully of its sheer awesome, or Elfen Lied if you want shit-tons of gore.

I've been watching anime along time and I like to think I have fairly broad tastes... so here is my top 10...
1. Serial Experiments Lain, It's The Second coming of Jesus, I even did a review!!! [http://www.escapistmagazine.com/forums/read/326.214642-Sacmans-Sac-tastic-Anime-Review-Serial-Experiments-Lain]

2. Ergo Proxy, A lot of people say Ergo Proxy is an anime you have to think about but on reflection it feels more like a parody or satire of over pretentious anime like Eva. The last episode is even titled "Deus Ex Machina."

3. Elfen Lied, What this show does is hard to explain. It's gory and bloody and filled with tasteless nudity but I loved it. Elfen Lied just got me so attachedto the characters that come the end I cried...

4. Welcome To The NHK. It's hard to explain... I mean it's really the only slice of life I've ever loved this much but I'm just not exactly sure why. It could be the pitch black humor, the realistic characters, the social satire, or even the brilliant writing. Honestly, however, I think it's more the fact that Sato's, The main character's, situation hit's very close to home for me...

5. FLCL. I hate to sound like everyone else but FLCL is 6 episodes of awesome craziness!!!

6. Blue Sub No. 6. I used to watch this as a kid on Toonami and I really didn't get it but going back to watch all 4 episodes now I can safely say it's one of the most polished OVA series I've ever see, with an amazing soundtrack, great action, great animation, a standout art style, and one of the most coherent messages about human nature I've seen in anime.

7.Gundam The 08TH MS Team. It really stands out for me because it's one of the few Gundam series that give a general sense of fear because the action is unpredictable and the characters really endear themselves to the audiance...

8. Paranoia Agent. It's a truly great murder mystery that keeps you guessing at every turn but look past that and you'll find a very intriguing deconstruction of the human mind...

9.Gungrave. Possibly one of the most underrated shows I've seen. Gungrave is a truly great story about friendship, love and betrayal without ever falling into cheesiness the great animation, spectacular fight scenes and well thought out character development doesn't hurt either.

10.Higurashi No Naku Koro Ni. Despite having no real plot, since I consider Kai and Rei to be non canon, Higurashi is one of the most atmospheric and frightening shows I've ever seen. It constantly keeps you guessing and always gives a feeling of paranoia and dread...

Mmmhh... I would undoubtedly reccomend Elfen Lied normally, but I may have to pass this time. It's not exactly a "girlfriend" kind of show. Then again, I don't know SilverStrike or his girlfriend in real life. Just take fair warning that it is very dark, very brutal, very depressing and just generally takes my award for the most potentially scarring series I've ever seen. And I love it so.

Rurouni Kenshin was a good one, it was my dad's favorite back when we watched anime together. I still have good memories of it. Yu Yu Hakusho is one I've recently returned to, and I think you could watch that one with dubs or subs, and it would be just as appealing. Everything else I could think of has already been said, so good luck in your search!

patlabor the movie (light hearted detective story, involving a ragtag misfit police unit and giant robots (about as 'real' as 'real robot' anime can get))
patlabor 2 the movie (rather serious detective story, same ragtag police unit races to prevent a coup)
macross (human race trying to avoid being wiped out by a race of giants using transforming mecha, and the power of song, also has a love triangle in there (fyi: do not go for the robotech 'adaptation'))
macross plus (ova set after macross covering two test pilots who were former friends letting bad blood spill out in the midst of a competition to pick the UN SPACYS new variable fighter, also, love triangle)
macross zero (ova set before macross, covers the civl war between the UN SPACY and the anti UN, also, a lot of mysticsm and a love triangle)
macross frontier (one of the colony fleets sent out after humans making peace with the giant zentradi is attacked by giant bugs called the vajra, obligatory love triangle)
gasaraki (4th son of a prominent japanese buisness/clan tries to find his identity, while there is a coup, an arms race to make the first practical giant mecha, 1000 year old daemons, and attempted summoning of a deity (code geass is somewhat of a spiritual successor to this))
black lagoon (mild mannered buisness man gets kidnapped by pirates, ends up joining them as he finds the lifestyle more exciting)
armored trooper VOTOMS (civil war, follows a soldier called chirico curvie (sp?), like patlabor it is the most 'real' of 'real robot' anime (one other way of putting it is 'why giant robots would actually kinda suck'))
vision of escaflowne
gun x sword (lanky drifter in a swallowtail suit searches for a guy with a claw arm in order to kill him as revenge for said claw guy killing his bride)
bubblegum crisis: tokyo 2040 (vigliante group consisting 4 ladies from all walks of life in powered armour destroying robots that go berserk)

legend of galactic heroes (no way anyone could adequately describe this
super robot wars OG: the inspectors (based on the PS2 game, involves civil war, interdimensional travelling budguys, and aliens, also has two of the most badass mecha and pilots ever created (kyosuke nanbu in the alteisen, and zengar stormvolt in the dygenguard))
