Tales of Destiny and Tales of Eternia. I haven't played either, but I played their successors, which are absolutely amazing, and I've heard that ToD and ToE are pretty damn good too. (Note: Eternia was named "Tales of Destiny 2" in its Stateside release. Then Japan made an actual Tales of Destiny 2... Funny how shit like this works.)
Seeing all these mentions of Final Fantasy IX warms the cockles of my heart...
So yeah, I'm gonna recommend that one too, big time.
As for other RPGs:
Legend of Legaia
A nifty little RPG that many people seem to have forgotten. It has a very entertaining trun-based combat system and some very nice monster designs. The dialogue is a bit tacky at times, but the story about Seru and Mist is very entertaining.
Final Fantasy VII
FF IX is still my most favorite by far, but I suppose you can't argue with the classics. Not as good as many people would make you believe, but the materia-system did spur a small evolution int the use of abilities within RPGs.
Final Fantasy VIII
A bit harder to recommend, some love it, others hate it. The main reason for this is the extremely paradoxical Junction-system.
Also: Chrono Cross, Xenogears, Legend of Dragoon and Jade Cocoon.
As for non-RPGs:
Spyro the Dragon trilogy
Seriously, all the Spyro titles made by Insomniac are fantastic. The first one created a magnificent and lively universe filled with classic platformer action. The sequels kept building on this concept and introduced more engaging stories, new characters, . In the second and third title, every level does not only sport its own theme, but also its own unique enemies and NPCs.
Crash Bandicoot trilogy
The original Crash Bandicoot hasn't aged all that well, but it's sequels are still very potent. Crash Bandicoot is all about silly, shameless platformer fun.
Rayman 2: The Great Escape
From the overly colorful Rayman to the dark and grimy - but still fantasy filled - Rayman 2. Silly humor, fun platforming action and mechanical pirate ninjas (yes, you read it right).
