Morphine, they aren't pure jazz wikipidea has them as "Alternative rock, experimental rock, jazz rock" but allot of their songs make big use of the sax which give it a jazzy feel.

I second the Morphine recommendation, one of the most underrated alternative groups of the '90's that nobody seems to talk about anymore.

I would also highly recommend Bohren & der Club of Gore. They're like ambient dark jazz highly reminiscent of the music associated with film noir.

I like the old school.... the Duke, the Count, that classic big band sound.
But then again the brazilian jazz sound a few decades ago was timeless too. I'm a big fan of a guy named Vincent Guaraldi as well, perhaps you've heard of him...

If you like Cowboy Bebop, then you want that Dizzy Gillespie, Miles Davis, Charlie Parker sound (bebop).

Pretty much everything mentioned already -- though I'll mention Coltrane's "My Favorite Things" in particular), as well as:

John Coltrane - Live at Birdland (not to be confused with the song "Birdland," which is equally great)
The Tony Williams Lifetime - Emergency!

and anything with Max Roach, Art Blakey, or Elvin Jones on it.

Yeah, they're not strictly "Jazz" Jazz but they have a sound all their own that takes a lot from Jazz IMO.
