Most Cowboy Bebop can be taken as Jazz, even though it is bebop, as the title states.

A few other names:
Dave Brubeck - cool/west coast jazz. Very easy to listen to but still pretty musically interesting

Dave Holland - fantastic modern double bassist

Chris Potter - possibly most celebrated tenor sax player alive

Charlie Parker / Dizzy Gillespie - pretty much first bebop players

Lester Young - classic tenor player

Charles Mingus - the "angry man of jazz" great double basssist and composer

John Coltrane - most famous tenor player ever?

Ornette Coleman - one of the first free players, warning, this is very hard to get into!

Wayne Shorter - played in so many different genres of jazz and still going today!

There's so much out there this barely scratches the surface of my favourites. Hope this helps!

You heard the Twinemen? Billy and Dana from Morphine are in it, along with Laurie Sargeant as the vocalist.

On the topic, I'm a big Coltrane fan. Also a Miles Davis fan, but never found him to be a great place to start with jazz.

The only type of Jazz I like currently is from Goldfish who are kinda an electro jazz group, I think they call themselves something else however.

It depends on what you'd like? I can recommend some older jazz, something like Buddy Rich (who is the greatest drummer known to man) or Duke Ellington (who has a lot of classic hits that you've probably already heard). As far as more modern jazz, I'm out of ideas. It all sounds great, even though I'm more of a blues guy myself.
