There has been some amazing feedback on this thread. A huge thank you to all. I have bookmarked this so I can slowly go over your suggestions with a fine tooth comb and do some research!

I just got a series called Desert Punk as well. Maybe no one has suggested it because no one likes it? lol. We'll see. Haven't watched it yet.

So far there haven't been many anime series that I have seriously disliked. But the idea behind the 'harem', 'lolicon', and 'Battle Monster' sorta genres don't do it for me. I don't mind if love is an element in anime, just not the primary element.

I'm surprised nobody's mentioned Crest of the Stars/Banner of the Stars. It's a space opera in the vein of Macross (nowhere near as epic, but I'm not sure ANYTHING is).

There's a lot to be said for particular taste, but here are a few of my favorites, in no particular order:
-Macross (space opera)
-Ghost in the Shell (cerebral, action-packed sci-fi)
-Crest/Banner of the Stars (space opera)
-Cowboy Bebop
-Naoki Urasawa's Monster (amazing, psychological thriller)
-Now and Then, Here and There (sci-fi, dystopian drama, mature themes, serious business)
-xxxHolic (feels kind of like a lighthearted, japanese version of the twilight zone sometimes)
-Ghost Hunt (starts off slow but is thoroughly awesome)
-Shikabane Hime (action action action)
-Eureka 7
-Mars Daybreak (similar to Eureka7, less plot)
-Darker Than Black (action)
-Full Metal Panic (wildly different from season to season, do your research)
-Planetes (character driven space drama)
-Spice and Wolf
-Honey and Clover (character driven drama; sappy and realistic, not for everyone)


If you're interested in something more character-driven than action driven I'd definitely recommend Planetes and, if you can handle more realistic, slice-of-life drama: Honey and Clover. Spice and Wolf (as someone mentioned earlier) is also worth a watch. Not for everyone though.

Ichiban Ushiro no Daimaou

This story of "love, magic, and battles" revolves around Akuto Sai, a boy who aims to become part of his country's highest order of magicians and contribute to society as one of its clergy. On the day he is admitted into the Constan Magical Academy, his aptitude test predicts the following: "Future Occupation ? Devil King." Thus begins his severe school life in which he is resented by his studious female class head, desired by a girl with mysterious powers, and guarded by a beautiful female android.

You're being counter-productive. If you don't like the frequency of a certain thread then don't click on it. Simple as that. I wanted to express MY opinion and get feedback based on that opinion. The same objective wouldn't have been possible by resurrecting (bumping) an old thread.

Some Suggestions that haven't been posted so much above already:

Easy to watch Animes

Kaiji

Features a lot of psychological Duels and careful drawn out planning by the main character. In this, it is somewhat similar to Death Note. Especially since it is also very exciting. Suffers from getting boring at the end however since the "twists" in the storyline become rather obvious.

Wolf & Spice

A quiet Anime which focuses mainly on the interaction of the two main-characters and their growing affection towards each other. Usually the series is episodic with multiple episodes tied together.
A very well done character study which, despite not having actual exciting, action in it, gets rather enticing with time.

Very exciting, action-oriented. Episodic. Reminds myself of Cowboy Bebop in its best moments.
Also features one of the coolest characters in an Anime I've seen so far: Revy.

More Demanding Animes

Samurai X - Trust And Betrayal

4 Episode OVA. Can best be described as a "Shakespearian Tragedy". Epic and very melancholic in tone.
The saddest Anime I've seen so far - highly recommended.

Monster

Focuses on the development of the main character as well as the psychological background of his antagonist.
Quite Epic and the mystery surrounding the "monsters" past provides a fairly enticing storyline to be followed. The series asks questions about the value of life and the relativity of morality. Though boring at times it is definitely a must see.

Legend Of The Galactic Heroes

The most epic Anime I've seen. Discusses issues like Democracy and Dictatorship, loyalty and the moral of soldiers. Since the series lives from its epicness its a definite must see if you like epic storylines. Otherwise stay away from it as it can be pretty boring at times.

Give Samurai Champloo a shot. It's done by the folks who did Cowboy Bebop (my favorite Anime of all time), and if you like Samurai 7 you might like it too (I know I certainly do).

Also, Outlaw Star might be something you'd like.

Try "Welcome to the NHK". It's hard to explain, but it's basically a physiological story about a Hikiemory (not sure if that's how you spell that). I found it extremely interesting, and was even able to keep my interest, which Death Note couldn't even do.

I thought they were pretty good, at any rate. Akira might be a little hard to find, though.
