Trust me on this one, invest in Castle Crashers.
4 player beat em up, loads of characters and costs only 15 dollers on XBLA.
With the leftover points you could buy Zombie Estate. 4 player Zombie birds eye view twin stick shooter.

My wife & I have been playing Lego Harry Potter lately and I have to say its the best Lego game yet.
Sacred 2 - a good co-op Diablo rip-off with plenty of exploration and all that other rpg stuff.
The more recent Katamari games have had some interesting co-op options.
If you have a ps3, you should also try Pixel Junk Monsters and Little Big Planet.

It's an fps by nature but other than that, Borderlands seems like the kind of thing you're looking for.

Castle crashers looks fun, so does Alien swarm.

I think I need to start making a list :D

EDIT: I haven't played Fable II but have (obviously) heard of it. Looked up the co-op, sounds like another good option.

I didn't even realize most fighters (apart from SSB) had co-op.

I'd say worms, while i find it more fun to play versus friends, you can play togetehr vs AI. Theres a new installment on it's way, Worms reloaded, which is coming out soon. It's also simple enough for a new gamer to understand, and still deep enough to really get into for more than a few hours.

Tales of Vesperia, while awesome, has pretty lame co-op. Only 2 players+ can play while in combat. If your BF doesn't mind sitting and watching a lot of cutscenes and/or reading text while waiting for combat to pop up go for it! ToV is the best jrpg of this generation though I must say. :D
You can pass the controller back and forth between battles. It's not the best co-op, but I've played FFX with my girlfriend just watching (she already played it through herself though), so it's actually not that bad. I also played FF1 with 3 other friends and we just passed the controller around during combat.

How about the good old Diablo 2? I used to play it with a bunch of friends through LAN, and I enjoyed it very much.
