Links will be posted to assist you.

I'll start of with recommending Baccano. It's an awesome 1930s gangster story with some train robbery and a little bit of alchemy thrown in. Tons of completely likable characters round out the cast with the feature being the hilarious comedy duo of Isaac and Miria. It also has the greatest English dub you'll ever experience.

Next I recommend my personal favorite, Tengen Toppa Gurren Lagann. It's a fantastic coming of age story about a young man named Simon and his big bro Kamina. They leave their underground village to explore the world above them. Lots of fantastic mecha action and plenty of moments that you can't describe as anything other than awesome.

Finally I'll recommend the greatest romantic comedy of all time, Toradora. It's the story of Takasu Ryuuji and Aisaka Taiga as they try to each set the other up with their best friends. Tons of comedy in this series with some touching moments thrown in.

As others have mentioned also check out Clannad, Akira, Welcome to the NHK and Fullmetal Alchemist: Brotherhood.

Hope that's a good starting list to go on. You can also find any info on the other series people posted on the website I just linked you too for all that info. Happy watching. ^_^

Just because I can, "Higurashi No Naku Koro Ni".
I too love terrible adaptations of decent games.
I know right?

In all seriousness though, I didn't think it was as bad of an adaption as everyone did though, but what are you gonna do, VN players gotta hate I suppose. Kinda reminds me of how readers of a book hate on a movie adaptation.
Film is a rather bad way to adapt most works given how little space there is inherently, but in the case of Higurashi (and even moreso with Umineko), there's no real reason why the couldn't do much better than they did with a full TV series. Putting the given episodes of any When They Cry game together averages out to be about the length of a robust novel in my experience, you should be able to adapt that into a season fairly reliably.

But oh well, DEEN has done worse I suppose. I don't think they'll ever make anything worse than Reflections.
Edit: Scratch that, disregard this post.

Well I got introduced to good anime by Rurouni Kenshin, Gundam Wing, and Outlaw Star.

But Trigun is by far one of my favorite shows ever.

So those 4 are my recommendations

Claymore. If you like serious Les Yay.
Ergo Proxy: See Darker Than Black reccomendation.
Burst Angel: If you're into Cowboy Bebop mixed with a bunch of fanservice and mechs, check it out.

Well instead of slapping down a list of animes that I've loved and enjoyed, perhaps it mite be better to do this instead.
What films and books have you preferred over the years? The odds are if you can divulge what you prefer here then it might be easier to link up animes that you might enjoy. Or even just genres or themes of some films and books as that'll help a bundle too in order to determine what you'll like ^_-

Dragonball (either origional or Z) and Sailor Moon. Good? Not really. But many of us started with them, why not you? Sure we were kids then though.

Haha glad to help man. If you like it might I recommend Durarara! as well? It's by the same author and retains the humor and character development that makes Baccano! great. Plus if you've seen Baccano! first you'll experience the greatest inside joke ever.

Hellsing or Bleach, those two were what threw me into the world of anime, against my will, too.

I'd normally recommend stuff along the line of:

Minami-ke
Sayonara Zetsubou Sensei
Seto no Hanayome
Pani Poni Dash!

-but I think It'd be better to let you integrate a bit more. X3
On that note:

Zombie-Loan
Soul Eater
Konjiki no Gash Bell
(and) Shaman King

-are all really good for now. Also Clannad. Clannad is always good. I definitely suggest Clannad(if the "magic three's" wasn't a hint).

Looked over my favorite stuffs, and it looks like I love anything that tackles a relatively plausible future, probably why I loved the crap out of Ghost in the Shell.

Sounds like you have a taste for cyberpunk, if you do?
Heh, never thought about it, but it would appear that I do.

Thanks for all the recommendations everyone, I've got some watching to do now.

I don't know what any of those animes are but I will say that regardless you should watch FullMetal Alchemist: Brotherhood. The series just finished with 64 episodes, and it was the most amazing anime I have ever watched.
This, so very much.

Dragon Ball. If you get to Z but want to watch it in English then get Dragon Ball Z Kai. The English dub for DBZ was made for little kids and not the casual anime fan. Now don't get me wrong. If you like the Z dub then that's fine but Kai's is far more accurate.

Lain is quite dark, but not as much as Technolyze. I think you'd enjoy it greatly. You should also check out Boogiepop Phantom, Paranoia Agent and Haibane Renmei.
