First of if your brand new don't pick a series like Bleach, Naruto, Sailormoon, Dragon Ball (Z), One Piece heck any series with episodes numbering in the 100's. Start with a movie, Akira or any of the Studio Gibili(sp) are prefrebable (note Akira is very much a condensed version of 1000+ page comic made for its fans who already knew the plot, but it is a traditional gateway), these will introduce the artstyle and conventions better than jumping into the middle of a long running story. Then you really need to think what it is that intreasts you. Look for a mini-series of about 12/13 episodes in your chosen Genre. If I was going to recommend at this point I would say look for FLCL (very pathonesque with its nonesequiters) or Parionia Agent which is series of stories about people with messed up lives and how there lives are turned around by a brutal assualt. Then look for a 26 or 52 episode series such as:
Evangelion, RahXaphon (both these series have very confusing endings and require mutiple viewings)
Excel Saga (very much a nonsequiter gag show)
AzuManga Daioh (very much a sketch show)
One of the solo Gundams such as Wing and Seed (avoid seed destiny, the main charecters from seed are replaced and its just not as good)
The Vision of Escaflowne (Gundam but in a fantasy setting and most excellent)
Full Metal Alchemist (not seen but I hear its higly recommended)
(Note: Avoid any movies based on a longer series as they are genrally either retellings and thus full of spoilers or epilogues/subtales and thus difficult to understand.)

Now your ready for one of the longer shows, Bleach is good but avoid the filler arcs with avengence. Others to consider are Ranma 1/2, Naruto, Pokemon (if you can stand it), One Piece, Sailormoon, theres litteraly hundreds of these long running shows and you'll find supporters and detractors for each one. Though a universal truth for all of them is that filler arcs are chud.

Trigun is good, and sort of combines multiple tastes I think. If you want an R-rated psych thriller/drama, there's Elfen Lied.

Meh, your mileage may vary, but I think Panty & Stocking with Garterbelt is far weirder than FLCL.

Anyway, I fully recommend watching the aforementioned show. Let's see...

Movies:
Akira - One of the most impressive animations of all time, i also recommend the manga, which is much better, but the movie is very good too.
Ghost in the Shell - No need to tell about this one.
Errr...Ghost in the Shell 2? - Kinda confusing but is good, not as good as the first one but is enjoyable enough.

Series:
Dragon Ball (all, except GT and the Buu saga)- I not like very long animes, but Dragon Ball kick ass.
Yu Yu Hakusho - Same as Dragon Ball, long but is awesome.
Cowboy Bepop - Best anime ever... In my opinion of course.
Hokuto no Ken - If you don't watch that one then you are already dead...
Hellsing Ultimate - Proof that not all vampires those day are gay. Very good.

Don't Recommend:
Evangelion - No, No, I not trying to make confusion here... But i can't recommend that, a anime where the main problem is the main protagonist it means there is something very wrong with it. There are some grown in him during the series, but even in the end he is still a wining little *****.
Elfen Lied - Good, i would recommend, but i recommend the manga instead, for release the manga there's a fucking closure. I can't recommend something that simple end like that, is frustanting.
Berserker - Same as Elfen Lied, is pretty good but there is no end and but read the manga that you win more. I read that is gonna be continued, but i would not depent on that.
High School of the Dead - I know there is people who liked... but... Dude... Like...Its too erotic...I know that people who kinda like that stuff...but...you weird...You should feel shame of yourself... If you really wanna watch them make sure that you are alone.

Well, the point of these threads are too see animes that cater to what the certain person likes. In a perfect world, you could use a searchbar and see the good animes that EVERYONE loves no matter what there tastes are.

Claymore is a good one. Beautiful woman who have been hybridised with demon blood to turn them into monster hunters for hire. Nice shiny, smooth animation complete with monster slaying in a medieval setting. A solid 7/10.

Ergo Proxy is incredibly atmospheric, but tough to follow. A real thinker that might take a few watch throughs to fully figure out. It's a futuristic story about a female detective on the trail of a man beleived to be a national traitor in a dome-like city that is though to be the last civilised place on a wrecked Earth. Amazingly fluid and detailed animation with cyborgs and deep character progression.

Ikkitousen. Boobs. And ass. And underwear shots. Then boobs, and boobs, multiplied by boobs, plus ass. Oh and maybe a fight with high school ninja warrior-whatever chicks, but only if there is boobs that hold the promise of more boobs eventually. Which they do.

Bubblegum Crisis Tokyo 2040 is one you might remember watching late at night years ago. Women in Mecha-suits fighting monstrouse machines, but worth it for the nostalgic value alone.

I'm sure you've heard of Evangelion, I liked it but some feel differently, you might want to get ahold of the recent movie iterations if you dont want to wade through all the character progression and psuedo-christian references of the series.

Speaking of movies, if you can, get a hold of one called Sword Of The Stranger. In fuedal Japan, a samuri escorts a young boy and his dog across the land, dodging the military, bandits and mysterious Chinese warriors who are after an advanced form of painkiller they believe will make them immortal. Very VERY good movie.

I tend to watch slice of life and the epitome of these is Azumanga Daioh which will make you very depressed at the end. Minami-ke, Lucky Star,Higurashi no Naku Koro ni are good...Uhh What else. To Aru Majutsu no Index and To Aru Kagaku no Railgun. What are you in to really. Fantasy, scifi, thriller, comedy?

I started watching anime with Daraemon when I was about 4 or 5, then yu yu hakusho, then DBZ, outlaw star and gundam waltz and zero and all that jazz.

I'd start with something that has bits of everything so you would have a feel of the way jokes are executed in japanese (very pun heavy and tangential) also it may take awhile for you to get past bad animation and drawing and focus more on plot on a lot of these older anime and some recent ones too.

The first two episodes of Hellsing Ultimate are the same as a couple of the episodes from Hellsing, but then they diverge quite a bit story wise.
well im up to the third onre and theyve started to diverge but so far i think i prefer the non ultimate version, since i liked alucards music in the first and it had less anime faces (overaction). Is it the same voice actors as well because they definatly sound similar (on the dub)

Gundam is always a good place to start, try Seed perhaps. Then there is Gintama, a nice all rounder.

If you dive into the deep end try: GANTZ, Elfen Lied & Higurashi no Naku Koro ni.
