Planescape: Torment. Refined old school gameplay with a new coat of paint. Glorious.
I want that just as much as the usual answer I give in topics like this; Arcanum.

Both amazing roleplaying games, I can already imagine the wonderful Victorian architecture of Arcanum and that sprawling city of Planescape in all it's graphical glory.

An upgrade in the combat system is also important. Sure it shouldn't be about the combat, but give them a Dragon Age-like system and all is well.

Star Wars: Battlefront. (1 or 2, their both 6th gen old.)
Completely this.

Also though I would go for Oddworld: Strangers wrath so I can actually play it on the 360 but apparently thats happening so thats good. :)

Colony Wars

Or something similar to this. That one part of Halo Reach made me think about this game again.

Pac Man. it'll include a story mode involving the backstory of each ghost as they lived, including facing eahc one as a boss by themselves.

I'd have to go with The Legend of Dragoon, a JRPG on the PS1 for those of you who haven't played it. It was overshadowed by the Final Fantasy series, but it is a great game and I'd love to see it remade and aggressively marketed this time.

Fallout 1 and 2. New Vegas was excellent, but I want all that great lore from a couple of games I could just never fully get into because of the ancient, old-school "PC RPG" gameplay from the 1990s.

Transport Tycoon with graphics on the level of something like Cities XL.

Morrowind with Oblivion's graphical quality (a modder tried this but got cease-and-desisted out of existence by Bethesda's lawyers.)

The TimeSplitters series please! If I can't have TS4 I think I'd gladly settle with TS2 with next-gen-online-platinum-award-bragging capabilities :)

Does Timesplitters count as old? Because I want to play that on my PS3 so badly...

It'd be best if they combined the second and third together to make one longer game. The first didn't really have a plot, so they could just leave it out.

The game has the horrible issue of looking like crap, and requiring a DOS emulator to run.
However, with improved graphics, higher max resolution and a fixed menu system, this would be the greatest exploration game ever!

In the short hour that I tried playing this, I visited 2 cold dead worlds, and a third world that had a massive crater 5 km deep and 1 km wide.

There are likely enough texture replacing mods and updated models and revamps for each town that you could get the graphics close to Oblivions.

Nthing Final Fantasy VII. We've already seen the PS3 tech demo using Aeris and Cloud, so we know it will look awesome if remade for this gen's systems.

Just don't... Let's not forget what happened with Splatterhouse

I admit that those old games where great at their time, but in these modern days, their remakes would be just plain boring

The Bungie tactical simulator Myth. Come to think of it, all the old Bungie games. PID, Marathon, etcetera.

The old BBS game Legend of the Red Dragon remade as a MMORPG with modern graphics and no WOW gayness. Also since we're talking old BBS door games, Trade Wars and Drug Wars.

Close Combat series.

Deja Vu.

Sid Meier's Pirates!

Golgo 13.

Earthbound.

North vs. South.

Super Dodge Ball.

Armed and Dangerous.
