Okay, so your list is sort of odd, because you seem to like mostly shows with lots of the things you say you don't want.

Anyway, I recommend you take a look at:

Fantastic Children (great character-driven mystery, excellent soundtrack, some music, great art style)

Gankutstuou (retelling of The Count of Monte Cristo, looks like nothing else ever made)

Patlabor (mostly slice of life comedy about the police tasked with handling giant robot crime. Mostly slow, character-driven humor. Occasional action, and some dramatic arcs in the TV series and movies. Directed by Mamoru Oshii.)

Jin-roh (morose mystery-drama with some amazing action at the end)

The complete filmography of the late Satoshi Kon (Perfect Blue, Millennium Actress, Paprika, Tokyo Godfathers, Paranoia Agent, Magnetic Rose)

Well I am probably one of the biggest fans of the original Fullmetal Alchemist there is so I'd definitely give that a watch. It goes in a little more detail in the themes that are present in Brotherhood a little more effectively in my opinion. As well as the fact that the Homunculi are far more interesting in the original show, again this is just my opinion.

There is also Wolf's Rain. It has a lot of really good action and deals with themes that I personally find to be very fascinating. That and the dub for the show is nigh flawless in execution of dialogue and the creation of wonderful characters.

Berserk: If you can get over the baaaaaaaaaaad animation this show is really, really, REALLY good. It would be my all time favourite if not for the ending and the animation work in the show. Set in a medieval Europe it is a tragedy with very complex and memorable characters and deals with themes of fate, ambition, hubris, sacrifice and war.

Yes I actually finished Monster 2 years ago. The episodes can drag on sometimes, but at least I know I finished it. Definitely an anime one shouldn't marathon.

I've been meaning to watch Planetes. With texhnolyze however, I found the pacing too slow after giving it 4 episodes a go. In short I couldn't find myself trying to deliberate with what exactly was going on. I've already seen Haibane Renmei, and did like it I must have forgotten to post it along with Kino's Journey.

Um, what exactly did you LIKE about SAO? It's a harem.
Mostly the action and the direction that the plot was organized in. To be fair it had more action and adventure than it did a harem. In fact the harem is mostly visible in the second arc. When I meant No Harem I meant that the premise of the anime should not revolve around character interaction for the soul purpose of loving. Examples include The World Only God Knows, Ouran High School etc.

I'm not sure what's wrong with me, but I couldn't bring myself to finish Stand alone Complex for whatever reason. When I talk about nudity, I mean unnecessary nudity. I understand if nudity is required for the purpose of advancing the plot. i.e. being left naked after being completely robbed or similar. What I do not mean about nudity, is the equivalent of clothes being ripped off through combat etc. (looking at you Strongest Disciple Kenichi).

I suppose you could call that fanservice, but I saw it more as a progression of the story, since that's where she firsts see's the Monster and the One who saves her. Though I do agree it could have been done at a different location. However, I think by using it in the shower scene, the director wanted her to be more vulnerable and less cautious of the things around her. Thereby, making the attack happen during that time showed how helpless she was against those monsters.

The thing about Cowboy bebop that I couldn't bring myself to enjoy is the Space cowboy ordeal they have going on. I just don't find that mix appealing. It's one of the reasons I don't watch Space Dandy either.

"Cowboy" is more of a slang for bounty hunter than an actual theme in the series. There're maybe 3 episodes where the Western genre is broadly referenced, and that's it. I always recommend people give it a try until episode 5.

OT: I have two recommendations, though it might wind up just being one.

The first is Jormungand, which is about a gun dealer traveling around with her bodyguards. The fights are fun to watch, it's got a pretty decent story, the characters are mostly likeable, though there is some fanservice it's pretty tolerable. The second is Toaru Kagaku no Railgun, which is a spinoff of Index that follows Misaka Mikoto instead of Tohma, who thankfully rarely shows up in it.
Watched Railgun and it's sequels, still prefer index than railgun. Honestly I'm watching just to catch a glimpse of Accelerator. He's my Hero in both series.

Seconding Steins;Gate as it's one of my top two favorite anime and you've already watched the other (Madoka Magica) Nevermind, you already saw this

Attack on Titan is also quite good. And, unless I'm forgetting something, absolutely no fan-service to boot. The first half of the first season starts off really strong, unfortunately the second half is a little slow and disappointing. Main character kind of sucks, but the supporting cast is strong enough to make up for it.

I'll also throw in a recommendation for Baccano. It's not exactly the greatest, but I found it fun and interesting. It has a very nonlinear storytelling and you spend most of the anime trying to piece together what happened.

One thing that's funny though is they used the Mayan calendar before it was cool (the show is from about 2000/2001ish) so the date is off by about a week for when it happened.
I was looking into Mecha anime a little while ago and noted this one looked interesting. I was deliberating on whether I was going to check it out, as someone who came so close to liking Evangelion (ended up hating it) I think I'll give it a look

My list is things I enjoyed not specifically the genre's I enjoy the most. The reason I placed the list with those anime in particular is to show exactly what I like without being limited to those genre. I'm sure you can pick off from the titles mentioned that most of them involve decent story. The exception being the Comedy short SoL's.

It's not about me wading through the shit. It's about me asking other people what gems they have found in a particular genre. The way I see things is, why watch something you don't like. I'd rather spend a bit of time in a forum specifically looking for something promising than randomly looking for an anime that I'll drop after the 4th episode. I might be putting too much faith in people to find exactly what I want, but I'd at least like to try.

I was debating watching Shiki last night, and seeing it mentioned on this post fortifies my curiosity to watch it.
