Added to most of the stuff already said, Nobody's Watching. I saw the pilot on YouTube and it was amazing, but those assholes at whatever network they wanted to air it on cancelled the whole project for something called Twins or some shit.
A sad death.

Jericho (The nuts campaign saved it for a half-season though), and of course, Pushing Daisies.
Jericho was mine as well. I thoroughly enjoyed the first season, but after that, the show really went downhill for me.
Didn't watch the second season, since it came on after we abandoned the television. But it had kind of a special resonance for us, since we live in little podunk townville, Kansas. :D

There really are so many but the ones that stand out for me are Firefly, Jericho and Kitchen Confidential - All of whome were ninja'd by other people DAMN YOU!!!

Also when Doctor Who ended way back in 1987 or there abouts. Damn near broke my heart that, but hey it's back!

I'm on the fence about whether to mention Dollhouse. I really liked the second halves of seasons 1 and 2, but I've read several times that those eps were mainly Joss catering to the network. The episodes he liked and wanted more of, the "Doll of the Week" eps, were sometimes really boring. So I'm halfway listing it.

The other show I miss is Pushing Daisies.

Carnivale was magnificent. The Sopranos drags on until it implodes, but we can't get a third lousy season of Clancy Brown being creepy and awesome?

Adding another vote to Firefly. Such a great show couldn't have been cancelled due to the content because goodness knows much less well made stuff out there survives. So I blame Fox... they're a good punching bag anyway.

Pushing Daisies. that was a great show with amazing writing. No one watched it and I really couldn't tell you why.

Help. It was a hilarious show starring Paul Whitehouse and Chris Langham. It had Chris Langham as a psychiatrist and Paul Whitehouse as all his patients. It was bloody brilliant, but halfway through making the second season, Chris Langham got accused of downloading child pornography and the show was canceled.

It's impossible to find anywhere. Which is a shame, because it's brain meltingly funny.
Nothing kills your career quite like a charge for child porno.

I don't suppose Garry Glitter will be making a comeback any time soon either.

I was miffed that Farscape got cancelled. That was a good serious (Claudia Black is awesome too).

Red Dwarf loved that show, but over the years I've started to suspect that I may have been the only one watching it. Or maybe just the only one in Canada.

Spawn animated series was never finished which still niggles at me. Also Dilbert was funny.
