As for the other UI problems you mentioned, I'm afraid I can't relate. I have no problem with most of the issues you mentioned. In fact, the majority of your complaints have never even happened once to me, in around 23 hours of play, on the PC version.
You also made some very odd points. You said there was a lack of item information, but I really have no idea what you mean, it says in the info box for every item whether or not it is a 2h or a 1h and whether it is light armour or heavy armour. I also don't understand the problem with not having a compare function, all of your weapons are in the same menu, so you only need to make one extra mouse movement to check whether your new sword is better than your old one.
Furhtermore, there is a sorting function that categorises items, the map "fog" doesn't block out icons or objective markers, so it will never stop you from being able to see the way to go, and I really have no idea what you mean by it being "painful" to see what items you have equipped. All equipped items are clearly marked, and if you want to see what you have equipped on your actual character, just swivel the camera.
I'm not trying to excuse Skyrim's awful UI, I just have no idea where the ajority of the complaints are coming from. There are some weird mouse slowing problems, vendor menus sometimes close for no reason and there is a shortage of binding options. Other than that, all the other problems I've heard raised just seem to be either so petty and tiny they make a fracion of a seconds difference or they just plainly don't seem exist.
