Morrowind - when your character puts their hand up in front of their face automatically when facing into a sandstorm (when in third person view). It was purely an aesthetic touch but it drew me into the game just that little bit more.
In Final Fantasy IX if you called a moogle and sent it away without asking it for anything, after a while, it got reeeally pissed off. Like, making death threats pissed off. Nice.
- The auction in Lost Odyssey where you could get all of the missable items (after you'd missed them, of course).
- Polite repairmen in Phantom Crash, if you don't have enough money to repair your mech then the rest of the bill is on the house.
- The Jade costume for Elica in the most recent Prince of Persia, it's just awesome.
The way you could get your robot butler in Fallout 3 to tell you jokes. Some of them were goofy as hell, some were just not funny, but I thought it was a really nice little touch.
Oh, and the fact that killing Three Dog meant the radio transmission changed. And the sound of tape being stretched when you mended and combined certain guns. And the beginning of the game with you being born and shit.
