Hardcore collector, too many anime to mention.
If you liked K-On/Nichi/Azu then you might want to look up GA: Geijutsuka Art Design Class:
One of those hardly known of gems IMO.

I don't watch a lot of anime, but I do enjoy the odd one every now and again. I mean, I've watched:

Neon Genesis Evangelion
Cowboy Bebop
FLCL
K-On
Dragon Ball
Dragon Ball Z
Dragon Ball GT
Fairy Tail
Naruto
(wasn't too fussed about this to be honest, but I can see why some people enjoy it)
Vampire Knight

But yeah, not watched a massive load of anime. I guess I've been meaning to, but I'm just not one sitting down and watching series and stuff.

I've read the odd manga as well. I've read the mangas of Dragon Ball, Dragon Ball Z, a bit of Naruto and Vampire Knight. I've also read a little bit of Full Metal Alchemist (which was alright), Death Note (which was utter tripe) and +Anima (which was alright as well).

I have watched (and own):

Angel Beats!
Blood: The Last Vampire
Code Geass (both seasons)
Darker Than Black Season One (Getting Season Two for Xmas)
Death Note
Devil May Cry
Elfen Lied
Ergo Proxy
Evangelion 1.11 + 2.22
Fullmetal Alchemist Brotherhood + the OVA's (getting films on Blu-ray when released)
Ghost in the Shell Standalone Complex (both seasons, getting OVA for Xmas)
HighSchool of the Dead
Neon Genesis Evangelion (as well as The End of Evangelion)
Puella Magi Madoka Magica
Spice and Wolf (both seasons)
Texhnolyze
The Melancholy of Haruhi Suzumiya (both seasons)
WitchBlade

I do not advocate piracy so a lot of these I watched online first (as they were not available) and bought them as they went on sale in the UK. I have also watched most of Blood+ but that has not been released in the UK so I can't buy it.

The only Manga I have is Puella Magi Madoka Magica (because I liked the series that damn much, plus it's not too long so it won't bankrupt me). I also have the Spice and Wolf as well as the Haruhi Suzumiya light novels.

I'm stuck between a hardcore and casual watcher. I love anime but I don't watch it too much.
I think that is how I would describe myself also. I really love most of the ones that I have watched, but I don't really "follow" it or watch that many series. Bearing in mind that the list I gave I started watching around 8 years ago.

I started watching anime in a more focused manner a year and a half ago, but wouldn't call myself a hardcore watcher. Death Note was my gateway drug. Before that, I only watched casually more famous anime such as DBZ and Yu-Gi-Oh! Here is a list of my favourite anime (movies and series) in no specific order:

Monster
Gankutsuou
Kino's Journey
Fate/Zero
Cowboy Bebop
FMA (both the original and Brotherhood)
Baccano!
Rebuild of Evangelion 2.0
Ghost in the Shell: Stand Alone Complex 2nd GIG
Raxephon

I don't have the commitment to watch the big 3 (Naruto, Bleach, One piece) since they're just too long and am postponing them for last once I get through the more shorter ones. I'm currently watching Mushishi since I wanted to watch an anime similar in tone and style to Kino's Journey. This doesn't count as an anime, but I'm also playing the Fate/Stay Night visual novel, which is a prequel to fate/zero, since I heard the anime of Fate/Stay Night was pretty mediocre. Other shows I enjoyed were:

Darker Than Black
FLCL
EVA
Ergo Proxy
Trigun
Digimon Tamers
Death Note
Code Geass
Steins;Gate
Soul Eater
Gurren Lagann

I used to eat up any and every anime I saw.

I've become far more discerning in my tastes now, but it's still easily one of my favorite things. I feel like my life would be far more dull and grey without it.

I've watched more anime than I care to list here or even remember off the top of my head.

Finally, someone who shares my love for GA: Geijutsuka Art Design Class. That is to date one of my favorite anime, and I am so disappointed that it only got 12 episodes + an OVA/special. It can be pretty confusing though for people who aren't very interested in art or color and composition admittedly though.
OT My list:
GA: Geijutsuka Art Design Class
To Aru Majutsu no Index
One Piece
Baccano
Hyouka
Chuunibyou Demo Koi Ga Shitai!
Tonari no Kaibutsu-kun
Fullmetal Alchemist: Brotherhood
.hack//Sign/Legend of the Twilight Bracelet
Hidamari Sketch
Bakemono/Nisemonogatari
Kami nomi zo Shiru Sekai
K-ON
Kokoro Connect
Working
World Destruction
"Tales of" anime adaptations
Sketchbook: Full Color's
Persona 4: The Animation
Nichijou

These aren't in any particular order. Also, these are my favorites, but what I like isn't limited to just these.
I also wish they would make Karate Shoukoushi Kohinata Minoru into an anime.

I'll add mine [http://myanimelist.net/animelist/gatx] as well, and it's not even up to date. I haven't been watching as much recently though have been trying to catch up on some newer series that I missed like Sword Art Online (which has so much nerd wish fulfillment it can only be counted as a guilty pleasure). I'm pretty into mecha but I typically try to avoid super robots - Aquarion and Gurren Lagann being the exception. Slice of life shows that don't try too hard to capitalize on "moe" are also right up my ally.

Obligatory list [http://anisearch.de/index.php?page=member&id=23259&s=anime]. Though it should be said that they lack some entries where I wasn't confident in rating them, or was simply too lazy in putting them up. So it's about 50 I'd say. Anyway, I'am not that much of a hardcore watcher who goes out of his way to know every new show or watch every single anime that has some clout to it. However, if I watch something it's usually an Anime or a TV-Series and I usually pick those out carefully depending if I think they have some quality and I can like them or not. This usually involves them having some depth or some really interesting aspects to them.

That said, personal all-time favourite would be Legend of the Galactic Heroes [http://tvtropes.org/pmwiki/pmwiki.php/Anime/LegendOfGalacticHeroes?from=Main.LegendOfGalacticHeroes], which is the undisputed king of space operas for me bar none. Second place falls to Code Geass [http://tvtropes.org/pmwiki/pmwiki.php/Anime/CodeGeass?from=Main.CodeGeass], which never ceases to amaze me how it somehow couples a breathtakingly rollercoaster-like ride of a show with strong characters and an interesting philosophical core conflict. Third is probably tied between the horrifically ingenious When They Cry [http://tvtropes.org/pmwiki/pmwiki.php/VisualNovel/HigurashiWhenTheyCry] or the devastating tragedy that is Samurai X: Trust and Betrayal [http://en.wikipedia.org/wiki/Samurai_X:_Trust_%26_Betrayal].

As for what is in store, well...a lot...if I ever come to it which is doubtful

Currently watching / plan to watch in the future

Boboboubo Boubobo (trying to finish it)
Spice & Wolf Season 2 (rewatch 2)
Puella Magi Madoka Magica (rewatch 2)
Samurai X: Trust and Betrayal (rewatch 5)
Cowboy Bebop (rewatch 3)
Gankutsuo - The Count of Monte Christo
Revolutionary Girl Utena
Princess Tutu (Dropped it but really need to finish it)
Serial Experiments Lain (Dropped it after the first episodes twice - everytime thinking you need time and the right mindset for this)
Heibane Renmei
Garden Of Sinners
Steins:Gate
Beck
Paradise Kiss
Sword Art Online

I'm a big fan of anime,

I watch at least the first two episodes of every show every new season, then choose the 1-4 I like to watch for the rest of the season.

I'm watching Madoka Box, SOA, and Chuunibyou this season.

I'm not a colossal fan of anime and don't really watch too many different series. However, I still have enough to warrant a list so:
-Pokemon
-Digimon (mainly the original)
-Naruto
-One Piece
-Sword Art Online
-All the Dragonballs

That said, I am beginning to lose interest in the Naruto anime for the quantity of filler [sub]they've put filler in a filler for heaven's sake[/sub]

Stuff I have watched:
Dragonball
Dragonball Z
Ouran High Host Club
Azumanga Daioh
Bokusatsu Tenshi Dokuro-chan
Escaflowne
Cowboy Bebop
Grenadier

Full Metal Alchemist (the original anime version)

...and various other stuff.

Also have read a few manga:

Hellsing
Death Note
Vagabond

Captcha: "real hoopy frood"

Thanks, captcha!

Have you read the manga? That anime follows the manga quite closely in art style and story but the manga is on-going. Also if you loved her work in GA, check out Shoulder-a-Coffin Kuro also done by the same manga-ka.

Yeah, I'm a fan of anime, but i only got into it in the last two years, so haven't seen as many as some people have.
But I have got a long list I have been told to watch, so now I just need the time to watch it all.

Only watched Death Note and Elfen Lied fully to the end. Liked them a lot.. I cried at the end of Elfen Lied.. even the second time I saw it. xD
But I can't sit and watch movies/series on my own, I prefer videogaming.

I watch it. I enjoy it. I wouldn't call my self a very hardcore fan of it, but I've seen enough to classify myself as a normal fan I guess.

I guess I'll list some stuff.

Finished and loved
Nichijou
K-On!! (Well, I just started season 2, but I loved Season 1 to bits)
Durarara!!
Baccano!
Persona 4: The Animation
Angel Beats (Dat ending...)
Black Butler (Still waiting on Black Sushi Chef...)
Gurren Lagann
Panty & Stocking With Garterbelt
Naruto
FLCL

Stuff I need to finish
Steins;Gate
Death Note
Neon Genesis Evangelion (I'm only on episode 2.. then all of the movies come afterwards...)
Deadman Wonderland
Eden of The East

Stuff I need to watch
Lucky Star
Cowboy Bebop (I've seen bits and pieces of it on Adult Swim, not much else)
Ghost in The Shell (Same situation as Cowboy Bebop)
Samurai Champloo

Stuff I don't want to finish
The Melancholy of Haruhi Suzumiya (Sure, it's an interesting premise, but the show just... annoys me for some reason)
