1) Minecraft. I'd state all the different reasons, but I think there's a length limit to these posts.
2) Skyrim. Not only incredibly fun to play but set in a wonderfully immersive game world.
3) Portal 2. Does it's predecessor great justice and more, brilliantly crafted gameplay with a story full of humor and wit.

I know these are not all "released in 2011" but my personal set are:
Fallout: New Vegas
Skyrim
Plants vs Zombies
Coming in a close tie is Carcassonne for iOS, although I'm not sure I can really count it since I have and play the proper tabletop version (with expansions), but the iOS version of it is simply outstanding, even with only the base tileset.

Bronze medal goes to L.A. Noire.
Fourth place consolation prize goes to Uncharted 3.

Rage would've made it but half way through I realized I'd rather be playing Duke Nukem Forever, in which I actually find alot of juvenile pleasure.

For a year said to be the greatest year of video games ever, I think aside from these there's really only Portal 2 and Dirt 3 for me.
