I Will Never Be The Same had a fantastic rendition of "Cry Little Sister" (From The Lost Boys)

Dreamtheater did a live Iron Maiden cover of a bunch of their songs that was awesome, I can't remember right now if it was a CD in particular or from diff. CD's.

The cover of "Light of Aidan - Lament" that was used in the "We are ODST" live-action trailer is by far better than the original.
The Rolling Stones - "Jumpin' Jack Flash" by Billy Fogarty (used in the game Elite Beat Agents).

I love both versions. But Stahli's has acoustic guitar (and I learnt it).

Alestorm's cover of Wolves of the Sea (originally in Eurovision 2008) is a lot better than the original. It's still a pretty bad song though...

Well there's Jeff Buckley's version of Hallelujah.Then there's the cover of Hurt that Cash did in his final years.Hall of the Mountain King is way better with Apocalyptica then any symphony.New Song is way better with I Adapt rather then the original with Nuclear Assault.

That's about it...For now.

Jonathan Coulton is awesome, to refer to someone else up the thread, but I always thought Aztec Camera's version of Van Halen's "Jump" was awesome. Great example of taking a song in a completely different direction, which in my mind is as much of a compliment to the composers as it is to anyone else.
