I only know the basics from KOTOR. Blue= Jedi Guardian, Yellow= Jedi Sentinel, Green= Jedi Counselor. These are usually the first color crystal a Jedi will get. Any other color is a change of the Jedi/ Sith's choice.

Purple is reserved for the jedi leader.
Or you can pick it up from strangers and run around with it 'cause it looks cool...

Based on the KOTOR way of thinking

Blue: Guardian (Comabt Focused Jedi i.e. Ki-Adi-Mundi )
Yellow: Sentinel (Balanced Jedi i.e. Obi-Wan, although he has a blue saber, I like to think he's balanced. )
Green: Consular (Force-Oriented Jedi i.e. Yoda, disregarding his badass saber skills. )

EDIT: Goddamn slow typing. Ninja'd.

The colours themselves don't mean anything. It's the crystal you use to make your lightsaber functional that decides the colour.

You're right about that. I believe that at one point in KOTOR II (Correct me if I'm wrong) an image of Darth Revan is seen with one Red and one Violet saber. Leia had a red lightsaber in the extended universe.

"The crystal is the heart of the blade. The heart is the crystal of the Jedi. The Jedi is the crystal of the Force. The Force is the blade of the heart. All are intertwined: the crystal, the blade, the Jedi. You are one."
―Luminara Unduli[src]

This is what a crystal represents

The colour is just personal preference. It doesn't really mean anything.
Except for red. Red symbolizes violence and blood which is why the sith favor it and the jedi are uneasy about it.

That's what I fucking hate about Star Wars franchise. How, in the end, it's almost always Good Blue against Evil Red.

I don't personally see how colour of one's weapon has to represent anything in any way. I see nothing impossible in Jedis with red sabers. Or sith with green ones.

Well, if you think about it, I don't like either Jedi or Sith. If anything, I agree with the guys who think that force is amoral and it's really how you use it. Which is, canonically, wrong. Which makes me hate star wars, among other horrible things.

Hmm. I guess I really can't contribute here.
No, canonically, it's right, the old Jedi order was just too stubborn, which is why Jolee left. Really, it took until Kyle Katarn (read: thousands of years later) for it to become more common for Jedi to be taught that the usage matters, not the powers themselves.
