Just go on youtube and watch the "Ask Emperor Palpatine" videos. He clearly explains the answer to why all Sith have red lightsabers and dress in black. And he would know..... Dark Lord of the Sith.

I thought the Sith used red crystals in their hilts because they don't have access to the Jedi's caves. They use red crystals because that's the only type they can synthesize. They could, of course, purchase or acquire light sabers crafted by jedi.
I'd guess the Jedi would have stopped using red crystals so they wouldn't mistake their own ranks as Sith.

in the EU, the color behind the blade is supposed to depict the quality of its production. much like the quality of the steel behind a real life sabre.
most crystals occure naturally, and the quickest and more reliable crystals to form generate blue and green colored blades. they are usually considered the average. however specific crystals which are more rare are often of higher quality which is why they produce unique colors.
the red blades seen used by the sith are usually made through artifical and often corrupt ways which increases their power but decreases their quality. because of the artifical production method behind these blades they tend to be produced in higher quantities which is why you often see sith duel weilding or using double bladed sabres.
however, with the lucas-rape of the canon, there is no real rhyme nor reason behind the blades color any more.

Expandedly the counselar is best represented by Qui-gon and episode 6 Luke("I want to talk and convince you that the path you walk is incorrect, but don't worry I can back it up with my knowledge of the living force.")
The KotOR system was dropped after their fall as all Jedi had to be capable in most if not all skill sets, additionally the sentinel fell out of the regular rolls, and finally the populace belief that yellow was close to the red of the Sith, due to the population at large believing that sith and jedi were two sides of the same coin.
Some Jedi leaders have carried the purple blade as Mace windu carried(but please note that Sam L Jackson requested the purple blade just because he is that pimpin), but not all as some in various eras carried blue or green or even orange and silver.
All information given is based mostly by memory of years of playing star wars rpg, KotOR, Galaxies and possessing a good number of books, comics, and a compliation of the late 90's mail group text (I have been *fwzooked*, arrrggh) but not touching them in the last 3 years. God I need to geek out.
