Best original soundtrack? halo series, far and away, and this little number from Halo 2 is my personal favorite.

Red Dead Redemption, Diablo 2, and Bioschock get honorable mentions, but seriously, good god do I love that freaking song's guitar riffs.

The first Tony Hawk's Pro Skater had a great soundtrack, but for original music Halo 1/2 actually had a pretty good score... Yeah.

Impossible to decide, so I'll just post my top choices and most outstanding examples:

Assassin's Creed II

Heavy Rain

Not exactly from the game (it's from the trailer), but I HAD TO include it as one of the best pieces of music ever recorded period.
From the game itself:

Castlevania: Symphony of the Night

BlazBlue

And finally Battlefield: Vietnam

Listen and prepare for the Eargasm

Most of the obvious choices have been mentioned.

-Chrono Trigger + Chrono Cross.
The games are carried partially on the backs of the amazing ambiance, the intro and music fits better than any other games in history. When you watch the intro for either, you feel like you are about to cross time on an epic quest. When you arrive at any location, or commit to any action, the music changes.
There are technically better scores out there individually (no small task) but so few games come as close to matching the mood the setting requires as these.

So many popular games music doesn't sound as good when taken out of its original format (unless heavily remixed, which shouldn't count in the first place), but that doesn't apply to the vast majority of tracks in either of these games.
The latter game went so far as to include a ROCK OPERA SERENADE in the middle of a fight and it fit!

Ok it may not be the best music ever in a game, but the theme to my favourite under-rated game The Darkness is just so damn good. I also like Jenny's Theme as well.

When it gets to the rising choral part half way through you feel like the god-damn dark lord.

Three songs instantly come to mind:

Rave On

Life Is Beautiful

Encounter

All the songs I have mentioned come from games with great soundtracks.
[small](Well at least I think they're great)[/small]

That one song? It would have to be both the original version and the HG/SS version of Lance's battle.

The music for Chrono Trigger was just superb as well.

I enjoy the Modern Warfare 2 Soundtrack. Hans Zimmer is friggin' amazing! Yeah sure the songs aren't that long. But hey I like it!

The Metroid Prime and Assassin's Creed series take it for me.

I love the Phendrana Drifts music from the first Metroid Prime

This, and Golden Sun and The Lost Age for me.

And toss in some Tales of Symphonia. Love me some Motoi Sakuraba.

...Speaking of which I need to find the soundtrack for GS/TLA. Have ToS.

If the topic was the most memorable, I'd say the Mario series. obvious reason.

The Halo Franchise has some of the best music I have ever heard. From the subtle tunes of ODST to the rocking Main Theme of Halo 2.

Let's see. I can think of three falling into different categories:

Original: Definitely Blazblue, just pure awesomeness.
Licensed: This is tough, but I'm gonna pick Burnout Revenge, that soundtrack just had a lasting impression for music in games for me.
Mixed (Both original and licensed): Hands down for me is both of the Jet Set Radio games. Hideki Naganuma made amazing songs and using bands like Cold, Rob Zombie, and Guitar Vader is just plain awesome.
