Soulcalibur IV: Where to begin? No Star Wars. Way, way more custom stuff and a height slider. An actual Story mode, get rid of ToLS bring back CotS. All the old music tracks in game not DLC. Damage to clothing instead of destroying it.

To judge from the 70+ mods I have juggling around in OBMM (and the frequent use of Wrye Bash whenever I find a new one), I'd say Oblivion. I'd also say "everybody talks about the weather but nobody does anything about it", except I did do something about it, namely download Max Tael's weather mod.

Frontlines: fuel of war
The single player campaign only lets you play as the western coalition and then only one battlegroup in about 7 missions in a straight line from Turkmenistan to Moscow. You should be able to pick your side and battlegroup.
So at the end of one campaign you can go back and do another
