As long as they continued to release expansions for it, I would have to say either WOW or GW2 just because I love fantasy and can quest with friends.

Yeah, I think I'll go with Minecraft as well. Lots of time to explore and perfect my architectural skills!

Dwarf Fortress?
That, or the hypothetical love child of Skyrim and Minecraft.
Pretty much my choice as well.

But then again, the very last game I will ever play. Chess.

Zork. The beginning of gaming as far as I'm concerned, so it's appropriate to return to it for the end.
If you managed to play Zork (and retain your sanity) as the one game for the rest of your life then fair play to you! Having played through Zork once I see no replay value in the game, save perhaps to try and get a better score.
I misread the OP, I thought it was the last game I play before I die. Zork would be a nice final playthrough but yeah, any more than that would be too much.

I'd go for Fallout New Vegas because I mod it and could spend some time making a total conversion to play once I got bored of all the game expanding mods out there. The vanilla game is pretty great too

Civilization III, it was the first game I played so it would be appropriate for it to be my last. I'd also really like to master it and win on the hardest difficulty.

I'm actually going to say that I like Guild Wars 2 enough to go for.
I'm pretty much doing this right now! I mean I also got Dark Souls and Transformer: Fall of Cybertron to played but all of my free time are going toward that game!

Crazy Taxi.... yeah, yea, yea, yeah, yea! Too bad there's no downloadable version with the original music or Crazy Taxi 2 / 3 available for download. C'mon Sega, if you don't pay The Offspring their royalties, they're just going to keep performing.

Sid Meier's Pirates! Probably the latest update by Firaxis, although every version ever made of that game was pretty fantastic.

Either Fallout:New Vegas, if modding is allowed, or Team Fortress 2.

I will never get tired of TF2.

Eh, I'd just find a new hobby.

No one game is going to hold my attention for long. I'd be sick to death of it within a week or so.
This, probably. Although I like Elder Scrolls: Oblivion pretty well. I can see coming back to it quite a bit if it were the only thing to play.

Sins of a Solar Empire: Rebellion.

Honorable mentions go to Civ 5 G&K, Fallout 3, Fire Emblem (GBA), Gladius, and if necromancy is allowed, Tabula Rasa.
