That moment after sniping someone in the face in Gears of War 2, you know when they stay standing for a moment when a geyser of blood shooting up from their stump of a neck? Ahh, thats awesome.

I'd say the first time I was REALLY taken in by a game's graphics was Zelda: OoT. It wasn't until Oblivion that a sunset and sunrise looked so flawless. Other games tried, but they never got that perfect color of orange to reflect off of the landscape. Even Twilight Princess looks great, but still not OoT-great to me. I also really liked that scene with the Goddesses creating the world. It still looks good now.
Bioshock definitely gets a nod. I've played the intro over repeatedly just for Andrew Ryan's lines, and the awesome view of the city.

The first time you come across "Big Big Baby" in Zombies Ate My Neighbors.
The cutscene in Halo:Combat Evolved where you see the Flood for the first time.
The first time you enter Paradise Plaza in Dead Rising and the feeling of sheer isolation as you view the zombie horde.
The sheer horrific beauty of Fallout 3's wasteland as you wander around scavenging.

Playing a game called Joint Operations: Escalation (massive 50km2 maps with 75 vs 75... I miss it)and I think the most beautiful moment was when you are weaving in and out a warzone on a simple dirtbike with your buddy on the back trying frantically to hit the apache chasing you with an ATC rocket launcher, bullets are throwing up massive amounts of dirt, the rockets streaking past you taking out friend and foe alike.... epicness. Especially when you end up not looking where you are going and you go streaking off of a 100 foot cliff into the ocean...

Prince of Persia: when you stop seeing ledges, rings, and poles and planing out your next move and instead stand still, pan the camera and enjoy. That game forces you to see only usable objects but it really is a beautiful game when you take a step back. Ahh.... pretty.
One of the most beautiful sights I have seen were the forests of Cyrodil in Oblivion, the skyshattering views of Assassin's Creed, or the Steampunk wonderland of Rapture.
